Chicken Enchiladas

I found this not very exciting. it may have been the enchilada sauce i used. hard to say, but in any case something was lacking in the flavor. i will say this was easy to make.

Garlic Crab Legs

this was pretty simple to make, but it was very messy. i followed the advice of some other folks and cooked the corn in its own pot. the sauce was excellent, but did not flavor the crab legs very much when i sauteed them. I think the problem was that the biggest pan i had was still not big enough to have the crab legs in a single layer. i tried to rotate them, but it was difficult to do so. i probably should have used two pans, but in any case. I think this would be fine without sauteeing and just using a sauce as a dipping sauce. note on the dipping sauce. i did use more old bay, red pepper, and garlic to give it more of a zing...

Mini Sour Cream Biscuits

Easy for sure. These had a very light taste to them. I liked them plain w/o any butter or jam on them. I think for those who want you could easily punch up the flavor with some herbs or cheese. I will make these again.

Awesome Pasta Salad

this was ok, but nothing really special. it did taste better the next day after it had sat overnight. I guess the flavors melded. Overall for pasta salad, I think you can do better with other recipes with less ingredients (less expensive). I don't think I would bother to make this again.

Italian Breaded Pork Chops

I really didn't find anything special about these. I did follow one reviewers suggestion to place the chops on a wire rack rather than leave it in the pan. In any case, I found these lacking overall flavor. they stayed pretty moist, which was good, but was nothing special in my opinion. I may try something like this again but with the addition of some spices...

Real Traditional Irish Soda Bread

This is very simple to make. It's a fine bread, maybe something to go good with a soup or something like that. I just found it very plain. I used some honey butter and that was a good addition, but on its own I found it rather bland.

Christmas Brunch Casserole

this was ok, but i was not overly impressed with it. it was sort of bland. i did make some changes as suggested by others. i cut up the bacon into small pieces and fried it. i also only used about 3/4 of the package. i mixed the hashbrowns, bacon, onions, and mushroom together and then dumped the egg mixture on top. i used 6 eggs. it really needs more than the four called for. i used fresh parsley as i has some. i did not use the garlic salt and maybe that made the difference with it being bland. i don't know for sure. i think maybe if i had made this with ham or even sausage it would have had more flavor. i will say when i had leftovers the next day it did seem a little better than when we first ate it. i may try this again with a different variation of ingredients to see if i can get a better flavor.

Triple Layer Cookie Bars

4.5 stars if it would let me. this will totally fix your sugar craving. Very simple to make. I followed the directions exactly. Kept well covered in the pan for 3 days. Then it was gone. so I don't know how well it would keep longer than the three days. I will be making this again.

Golden Carrot Buns

I cut this in half and made the buns bigger than called for. I had about 18 total. These were tasty, but I really didn't taste the carrot flavor. I think this is a good way to get kids who are picky about there veggies to eat some veggies. i would make these again.

Roasted Vegetable Lasagna

I wanted to try a meat free lasagna. While this was good, I just didn't like it as much as my usual lasagna. I will say I liked this better the next day after the flavors had some time to meld. This was a little cumbersome to put together. The roasting of the veggies is fine, but my oven didn't fit them all at the same time. So that in itself added extra time I didn't plan on. I also added extra sauce as suggested by others. The amount called for really isn't enough at all. I ended up using two cans of sauce - so 52 ounces total. It all fit in the pan just fine. I may try a meat free lasagna again, but probably not this recipe.

Baked Coconut Shrimp

this is 4 stars with the orange marmalade dipping sauce. on its own i would only give it 2 stars. i will say that i used frozen shrimp, not fresh, so maybe that will make the difference. in any case, the sauce is what makes this. i utilized marmalade and stone ground mustard for the sauce. the shrimp i followed the recipe exactly.

Cheesy Acorn Squash

loved it, loved it, loved it. I did not change anything in the recipe. The only thing that was different was that I had extra stuffing for the squash. it would just not all fit. I probably had enough to fill one more half. This was super easy and I will definitely make it again.

Cranberry Pears

had cranberries and pears i needed to use asap. was very pleased with this overall. i utilized it as a side dish and it somewhat reminded me of the cinnamon pears my grandma used to make. i tried it both warm and cold and personally i enjoyed it warm better.

Pumpkin Cranberry Nut Bread

this was good, but i didn't think it was outstanding. i was trying to use up some cranberries i had bought last season that had been sitting in my freezer and i just happened to have the rest of the ingredients. i think this is a good bread to make if you are not looking for something too sweet, but its not the best pumpkin type bread i've had.

Creamy Cheesy Mashed Potatoes

very very tasty. made it as described and it was so yummy. very easy to make. i used a masher on the potatoes prior to using a mixer as i felt the potatoes would mix easier if they were broken down a bit first. i can see how the suggestion of adding bacon would make it even better. i think this tasted best when eaten immediately. the next day leftovers just didn't quite have the same zing. i will definitely make these again in the future.

Quick and Easy Green Chile Chicken Enchilada Casserole

quite tasty. this was easy to make. I did mix the chicken with the sour cream per suggestions. much easier to spread. I also did not char the tortillas and it turned out fine. the tortillas were a little soggy come leftovers, but the taste was still the same. I will definately make this again. super easy and yummy.

Byrdhouse Blistered Cherry Tomatoes

In my opinion this is nothing special. It is a good way to use cherry tomatoes if you have an abundance (As I did from the garden). The taste was Ok, but like I said nothing special. I think you could roast these in the oven and the flavor may deepen a bit. On the upside this is super super simple to make. I did use fresh basil as I had it on hand. It's not that I wouldn't make this again. It's just that it was kind of boring.

Baja Fish Tacos

unfortunately the fish I used detracted from this recipe. I had frozen boneless, skinless cod pieces that I'm afraid were just not the best quality (you could tell they were not frozen when the fish was fresh). In any case I was not overly excited about these fish tacos. I subbed a few things. I had old el paso seasoning on hand so that is what i used. I used corn tortillas. I also used low fat sour cream with just a dab of mayo blended in. we used napa cabbage, garden fresh tomatoes, onions, bananna peppers, salsa, and shredded cheese as toppings. Overall I was not very happy with this taco. Its not that it was bad. But the overall flavor was not appealing. I may try these again with a better piece of fish to see if that makes a difference. Despite the flavor issues I had, this was very easy to throw together.

Fresh Tomato Pie

This has potential, but even based on the minor changes I made to the recipe I found this not very tasty. First off, I used a combination of shallots and onions. I first cooked these in a little butter based on other peoples suggestions. I used both yellow and red tomatoes seeded and chopped up. I used dried oregano as that is what I had on hand. First I prebaked my crust. I them put some cheese in the bottom before putting in the tomatoes. I don't think I had the full amount of parm. cheese for the topping (I didn't measure, just used up what I had) so I added some extra mozerella. I did not like the topping. It was too strong. I can't quite place my finger on it. Maybe there was just too much mayo for my liking. If I were ever to make this again I believe I would cut down on the mayo and add spinach and bacon per other folks suggestions. I'm thinking this would then resemble a BLT. But as I made it I cannot give it better rating.

Rich and Creamy Tomato Basil Soup

super good. i actually would give this 4.5 stars if it would let me. I seeded my tomatoes, but left the skin on. I simmered for about 90 minutes and used my emersion blender. super easy. I doubled the recipe, but was able to cut back on the cream by half a cup and the butter by half a stick and it still turned out great. I will be making this again for sure.
