Mother's Ham Casserole

Loved this! Easy and very, very tasty. Made just small alterations to fit what I had on hand. Used left-over baked him from Easter, added some fresh green beans in with potatoes, and used Italian Panko breadcrumbs. Took to potluck and no leftovers. Recipe requested by many!

Jeannie's Famous Potato Hamburger Casserole

Made as listed the first time, and made again with some changes. Original recipe lacked flavor. Added some Worchestersire sauce, garlic, mushrooms and chopped hot pickled pepper rings. Much improved. I really enjoyed this recipe with the additions to boost the flavor.

Pesto Pepper Tortellini

I found this exact recipe in my Taste of Home Quick Cooking 1999. It is good, but heavy cream does not thicken on it's own. Cooked everything, mixed together, then had to pick out all the stuff and thicken the sauce with some milk and flour.

Scalloped Potatoes and Onions

These were good, and very easy, however for our taste they seemed to lack something in flavor and richness. I attribute this to the use of mayo as the only "creamy" ingredient. I think I will continue looking for other recipes. Note, if you make these, do not be concerned when pulling them out of the oven to find them very "liquidy". The liquid is all absorbed within 5-10 minutes of removal from oven.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

Wow! This was very good and super easy to make. I made no changes in the recipe and was very pleased with it. I served as a side dish with simple pan-fried pork chops and everyone commented that the meal just felt like a special holiday feast just because of the potatoes!

White Cheese Chicken Lasagna

This was really good. Lasagna can be time consuming, so to help cut that down I boiled chicken breast the day before so ready to shred during assembly. I did as someone suggested combine chicken, spinach and ricotta. I used the no-cook noodles. This ia a beautiful completed dish, cuts well if you let it sit. I was worried as sauce was very thin, but it sets up nicely.

Beef and Roasted Red Pepper Sandwiches

I roasted my own red pepper (see oven roasting instructions on this website), I broiled bread with garlic butter, added cheese, heat to melt, added meat and pepper. No au jus. Sandwich is killer without it!

I'm still on the fence about this recipe. I did make with half the sugar called for which was a good call. The texture was a little funky. I wonder how adding some sweet onion would be?

Spinach and Tortellini Salad

I've made this recipe (doubled) for potlucks twice now and there were no leftovers! Other than cooking torts, it's just a matter of tossing things together so I appreciate the quick prep. I do cook tortellini the day before, strain, add a splash of the oily dressing to keep pasta separated. Put in storage bowl with everything EXCEPT the spinach and cheese. I stir in about a cup of Italian dressing. Refrigerate, stirring to mix occasionally. I use pre-package of baby spinach. Remove stems, place in the bowl you will serve from, cover and refrigerate until ready to serve or take somewhere. Before combining, if tort mixture needs more liquid, add a little more (1/4 cup dressing. I like the whole salad lightly coated, not swimming in the dressing. Combine in serving bowl, stir, add shredded parmesan cheese to the top. Yummy.

Tropical Turkey Meat Loaf

My family and I really enjoyed this recipe. My husband doesn't particularly care for turkey meat, but even he liked this. Make more of the pineapple mixture as you are sure to want more than the recipe proportion calls for. Leftovers good cold for lunch the next day, or even as a sandwich.

This recipe was just ok. Nothing to write home about though. I guess I was looking for a taste to really jump up and grab me. This one wasn't it. Like I said, just "ok".
