Salsafied Chicken and Rice

Definitely needs green onions. Also, I seasoned the chicken with my homemade taco seasoning that is awesome. And I made the rice into a burrito with guacamole, sour cream, reduced fat cheese, and black beans. It was great!

Taco Seasoning I

I found this recipe because I was looking for an alternative (more natural, less salty) taco seasoning. I love this recipe as is and I use about 4-5 tablespoons per pound of meat (beef or chicken). I add about 1/3 c. of water to make it coat the meat better. I sometimes like a little more heat so I use spicy chili powder or add some cayenne. But mostly love it as is and will never buy taco seasoning in a packet again!

Salmon with Brown Sugar Glaze

Chicken Enchiladas IV

We really enjoyed this recipe. Definately will make it again. It was so yummy. But we used fat free sour cream, reduced fat cheddar cheese and carb balance tortillas to make it less fat. They turned out awesome and were a third of the fat.

Homemade Lasagna

We enjoyed this, but we added crushed red pepper and green peppers. Additionally we cut the fat and calories by using ground turkey and 2% milk mozzarella and reduced fat parmesan cheese. But don't put the reduced fat cheese on the top until it is almost done baking, it burns very quickly. You could also use tin foil during the whole baking process to keep this from happening.

Salmon with Lemon and Dill

We really enjoyed this recipe. However, I took the advice of another writer and used olive oil instead of butter. Using butter makes me feel guilty for the fat content. I also used lime instead of lemon, and it turned out delicious. Next time instead of black pepper, I think I'll try cayenne pepper to give it a little more kick.

Restaurant-Quality Maple Oatmeal Scones

I served these for Christmas brunch and everyone really loved them. However, I think next time I will use more maple to give it more flavor. They need a little more punch, but I enjoy big flavors. I also used craisins instead of the dried cherries for cost effectiveness. I thought they were a nice compliment to the maple.

Applesauce Custard Pie

This recipe was really good and I don't think it was too sweet. However, the texture was a little off for me so next time I will try to thicken it a tad to make it a little more firm. Also, next time I intend to try it with homemade cinnamon applesauce, I'm sure it will be great.

I enjoyed this recipe, but changed it a little to suit my taste. I used half red peppers and half green peppers and a lot more garlic. I also added crushed red pepper to add a little kick. It turned out great!

Creamy Cajun Shrimp Pasta

This recipe was DELICIOUS, however, I do have some thoughts. One time I made this and didn't have cajun seasoning so I substituted with cayenne pepper. It was great, we liked it better that way than with the cajun seasoning. Next time we plan to add asparagus or other green vegetable. It will be great.

Feta Shrimp Pasta

This was a great recipe. I just put a little bit of personal touch to it. I doubled the amount of sauce beause when cooking the dish I decided that for me, I needed more sauce. Also I used light butter to cut the fat, add a touch of garlic, a bit of lemon juice, and some asparagus, it makes a yummy dish I can eat even on my diet.
