Mint Corn Salad

I wanted to use up some of the mint we have growing in our yard. I think I've decided that mint is for mojitos, not eating. Just did not care for the flavor, nor did my husband. If you aren't big mint fan, I wouldn't suggest this dish to convince you.

Lemon/Raspberry Streusel Muffins

I didn't read the reviews before I made these, and I was expected more lemon flavor. Now that I read the other two reviews, I see its not just me. That said, it was a very light, airy muffin that had a great consistency. Loved the raspberries. I think I may play with the recipe more to give it more flavor.

Super Bowl Bread Bowls

My rating is only for the bread bowls. I have made these twice in the past week. They are very easy and so yummy! Instead of a bread machine, I use a kitchen aid mixer and let the dough rise twice (once after mixing, punch down, divide and make rolls, rise again).

Sweet Potato Oranges

Green Pea Casserole

Made this at the last minute for Thanksgiving when I realized we were missing something green. My husband loved it! Much better than the typical "green bean casserole." I didn't have crackers, so I used, of all things, the bran flakes from a box of raisin bran. I also used frozen peas, since thats what we had. I microwaved it (minus the topping) for 5 minutes then put it in the oven (with the topping) for about 10 minutes. Not bad for deciding to cook a veggie right when we took the turkey out of the oven.

Amish Slaw

I love this recipe and have used it several times. For those talking about it being too sweet, I once forgot to toss the cabbage in the sugar, instead just putting the sugar in the dressing. It was wonderful, albeit tangy, that way too. I'm a fan of vinegar and tangy flavors, so that might not work for everyone.

Oyster and Cornbread Dressing

I discovered this recipe last year at Thanksgiving. The whole family loved it. I made it again for my office holiday party and it won first place in the side dish category. The second time, I cooked it in a crock pot. It worked very well actually. I cooked it about 4 hours and stirred it a couple times when it was getting too cooked on the sides. The other modification is that we add a little sugar (2 tps) to each cornbread mix. Its my southern roots, I like my cornbread a little sweet.
