Spinach Tomato Tortellini

This has become one of my "go-to" easy recipes. So simple to prepare, and the leftovers are great. Just for fun, I use tri-colored cheese tortellini. I also use all half and half only (instead of the cream/milk) The other thing I change: more spinach!

Yummy Roll Ups

These are a crowd pleaser, though I make mine a little differently: I start with a flour tortilla, spread it with cream cheese, and then layer as indicated here (using thin-sliced ham).

As others have said, I found the flavor a bit bland, although it is a good recipe to use as a starting point. Perhaps more onions, more garlic, additional herbs?

Cream Puff Cake

We had a girls' get-together last weekend, and one of the gals brought this. A real crowd pleaser! She added some almond extract to the pudding mixture, which imparted a very elegant flavor.

Whiskey Sour

This was a staple in our house in the late '60s. Very easy. We use Daily's Sweet & Sour Mix. And, very important, use a shaker and ice when mixing the ingredients.

Asparagus and Mushroom Puff Pastry Pie

This recipe was easy and delicious. I was making it for dinner and wanted it to be a little heartier, so I added some chopped onion and diced Canadian bacon. Makes a nice leftover for lunch, too. Actually, this can be served any time of the day or night.

Cream Cheese, Garlic, and Chive Stuffed Chicken

The cream cheese "stuffing" was a little too much. I like the idea of whipping it up with something else so that it's not so "hard." Maybe using "whipped cream cheese" instead of the block would be better. Or maybe spreading the cream cheese on the breasts instead of rolling the breast around a little chunk of cream cheese would be better. Also, one strip of bacon (semi-cooked) around each breast wasn't quite enough. Sprinkle each breast with some chopped, cooked bacon. This is one of those recipes that is great as a leftover. I tried it with both rice and egg noodles. I prefer it with parslied noodles.

Raspberry Kielbasa over Cheese Grits

I put off making this recipe because it "scared" me. A very unusual combination of ingredients, but somehow, it works. I served it as brunch. Dear BF LOVED it and wants me to make it again; I liked it. It is very filling, and it sticks to your ribs. I plan to make it as a surprise brunch for all the boys over the Thanksgiving break. Can't wait to see their faces.

Kathy's Roast and Vegetables

I was disappointed in this roast, especially after reading all the rave reviews. I used a sirloin tip roast (because that's what BF bought). Otherwise, I followed the recipe. The meat cooked nicely, but I thought the gravy was dull and tasted like cardboard. I have two other tried-and-true pot roast recipes, and I think I'll stick with those.

Rempel Family Meatloaf

This recipe is great! Not only is it easy, but it's very, very tasty. I'm sure it can be modified in various ways, but I made it just as directed. Note: I used a lot of generic/off-brand ingredients, and it turned out fine (e.g., onion soup mix, crackers). Another thing I liked: the meatloaf was ready before the rest of the meal (mashed potatoes & green beans), so I kept in in the oven, covered and on a low temperature -- and it did not dry out. You gonna like it!

Chiliquilla

One of the reasons I love this recipe (in addition to its yumminess) is that it's so versatile. First time I made it, I didn't have corn tortillas, so I substituted nacho cheese doritos (just before serving). I also like to sprinkle some dry taco seasoning mix in with the ground meat while it's cooking. When using the corn tortilla strips, I saute them until they are crispy and set them aside, adding them at the end - layer of meat mixture, then olives & green onions, then finally tortilla strips, sour cream & cheese (until cheese melts). This was a hit with my family.

Scalloped Taters

I wanted to try a different scalloped potato recipe to go along with our Easter ham. This recipe was just the ticket! With a vegetarian in the family, I substituted cream of mushroom soup for the cream of chicken - that was quite good, but I think the cream of chicken would make it more flavorable. I also added a couple shakes of garlic powder. AND, though I'd like to try it in the slow cooker someday, I did it in the oven (350F for 45 minutes), and it was GREAT! Loved it! Easy and quite tasty.

Beef Nacho Casserole

This casserole recipe is GREAT and easy. As others did, I made some alterations (added onions when browning beef, added black beans and cut back a little on the corn, supplemented chili powder with a little over a tablespoon of packaged Taco Seasoning mix, changed Miracle Whip to Mayo/Sour Cream mixture, used a Mexican combo style shredded cheese along w/ some shredded cheddar). YUMMO! I will definitely make this again. THANK YOU!

Artichoke and Tomato Chicken

Wow! This was a nice surprise. Like others, I made some adjustments. Because I was using a homemade (very thick) tomato sauce (which already had herbs), I went light on the seasoning. I also used shredded mozzarella, and fewer fresh tomatoes than the recipe calls for. My dear boyfriend is always raving and using superlatives about my cooking -- but he said that this one tops them all! I was pleasantly surprised to see that the "cheesy stuffing" didn't pour out of the chicken roulade while baking!
