Apple Pecan Cobbler

I used 1% milk and did not put pecans in. It came out great. My consistency was a little bit on the most side and less on the cake like side, but delicious none the less.

Greek Orzo Salad

Great recipe. It was a great crowd pleaser at the BBQ and even better as leftovers for lunch the next day. I did make some small modifications based on the other reviews and what i had in the house. I used fresh basil rather than oregano. I didn't have any lemon pepper so i just used regular pepper. The other reviews suggested Greek salad dressing instead of the artichoke marinade so i used Cesar salad dressing (didn't have any Greek). Turned out great.

Eggplant Parmesan II

This was really good, but it was too salty. I followed the suggestions of the other reviewers and let it sweat for 20 minutes. I did wash it off and pat it dry. But there was still too much salt.

Butternut Squash Risotto

I thought this recipe was great. Really yummy. The taste was so-so before the parm cheese, but with the cheese i couldn't stop eating it. I used vegetable stock intead and following the other reviewers only used 3 cups, it turned out great. I did also roast the squash in the oven rather than boil it. I think it added a nice nutty flavor and it was very easy to peel. Keeper!

Vegetarian Meatloaf with Vegetables

It was ok. Nothing great. I followed it exactly and it turned out a little dry. Plus it uses so much fake meat that it gets a little pricey.

Orzo with Mushrooms and Walnuts

This recipe was fantastic! I did make a few changes, per my own tastes and the suggestions of others. I used portabella mushrooms, thinly sliced, garlic, basil and no-chicken broth for vegetarian reasons. I also toasted the orzo before setting it to simmer. Came out great, and was very flavorful. I will defiantly cook this again.
