Tater Tot Taco Casserole

Reviewed: Apr. 14, 2013
This was pretty darn good. A bag of tater tots were opened so I wanted to use the remaining tots before they went bad and came across this recipe. I used Alexia potato puffs with garlic and cracked black pepper, so it gave the casserole extra flavor. I also added a small can of green chiles and topped my serving with sour cream. Goodness gracious! I'll definitely make this again but will double the recipe. It went entirely too fast!

Southern Green Beans

Reviewed: Jul. 10, 2012
So much flavor from these ingredients! I didn't have the white balsamic vinegar and I ended up using more chicken broth than specified. I'm not sure about the timing for cooking these green beans but everyone likes their beans cooked differently (hard vs soft). After the onions cooked I added the garlic, broth and the potatoes and cooked that for 5 minutes. Then I added the green beans and a little more broth to help deliver the steam while cooking. I found that I like the potatoes cut smaller because they packed more flavor. I will make this again and would make it as a dish for an event.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jul. 10, 2012
This chicken in great!! Like many I made substitutions but that's because I didn't have 2 of the ingredients on hand. Instead of onion powder I used minced onion and instead of white pepper I used a pepper medley. The other reviewers had me a little scared about the amount of salt so I used 2 teaspoons of sea salt instead of the 4 tsp. The paprika gives this bird a nice caramel look and once I made the first cut the rest of the chicken just fell off the bone. The remaining meat will be great on a sandwich! For me once I made this batch I didn't understand how it could season 2 chickens, so I ended up doubling that and using it on ONE chicken. I seasoned the inside, outside and under the skin. Then I stuffed the inside with the quartered onions and 4 cloves of garlic. Twice while baking I drizzled the drippings over the chicken. Flavor flavor flavor is what this chicken is..

Chris's Incredible Italian Turkey Meatloaf

Reviewed: May 2, 2012
Very good recipe. I was a little worried about how the oats would turn out so I only used 1c of them. As for the seasoning, I didn't measure them. I used garlic salt, pepper and italian seasoning and just seasoned the meat mixture. The onions cooked well and the oats weren't noticeable. Look forward to making this one again.

Seven Layer Tex Mex Dip

Reviewed: May 2, 2012
Made it just as directed and it's very tasty. I was worried about the sour cream/mayo mix because of the reviews, but I gave it a go and it adds a great "zest" of flavor. Very easy and inexpensive to make. Served them with scoop chips.

Best Yet Turkey Chili

Reviewed: Nov. 6, 2006
Great recipe, but I only gave it 4 stars because I did a lot of changes. I added 1/3c. of onion and 1/4c. of garlic. The liqud from the corn was drained and 1 can tomato sauce was also added. Instead of a pinch 3tbsp of chili powder, 1tsp of pepper flakes, 2tbsp of cumin, pinch of cinnamon and 1/2c. of BBQ sauce. After all that was added it's a great chili.
