Spinach Cheese Pasta

I made this for the second time today - I enjoyed it the first time around but did think it could use a bit more seasoning in addition to the garlic. Added a splash of lemon juice and chopped fresh oregano...and I used gluten-free pasta for a tasty and nutritious lunch with iron and protein.

Kielbasa and Cabbage II

I liked this and will probably make it again but I did saute the onion and the sausage together first and then added the cabbage. I used a bag of coleslaw mix with carrots, (it was nice to have another color in the dish) and although I used the full amount of cajun seasoning, I skipped the black pepper completely. I was afraid that would have been too spicy for my taste.

Fried Bologna Casserole

Very comfort-food and tasty. I quartered the bologna before frying to get a crisper texture and smaller pieces that would layer better. Also added sour cream to the warm potatoes.

Grilled Sausages with Caramelized Onions and Apples

Love the flavors of apple, onion, and bratwurst combined! I simmered the bratwurst, then sliced and browned in butter separately. I think thyme is wonderful with the caramelized onions and apples...

Coconut Rice

Nice subtle flavor. I used 1 can unsweetened coconut milk & enough water to equal 2 1/2 cups - 1 cup basmati rice - 1 heaping tsp. white sugar - and a splash of lime juice. Leftovers will be saved for rice pudding - yum!

Mandarin Orange Chicken

One of the easiest and tastiest meals I've made with Chinese restaurant taste! I used homemade hoisin sauce (with peanut butter). Added some cornstarch to the hoisin/orange mixture to thicken the sauce since I didn't flour the chicken.

Tender Tomato Chicken Breasts

This was so easy to put together and I really liked the results. I used ingredients that I had on hand, namely Mexican Stewed Tomatoes and a packet of Sazon Goya seasoning to give the flavors even more punch. Didn't do the veggies as per the recipe, because I already had others prepared.

Easy Creamy Vanilla Fudge

I liked this fudge because it's an easy and simple way to quickly satisfy a sweet tooth. I only made a small amount of the recipe as a treat for myself so just made individual candies in mini cupcake papers. Also added peanut butter for extra flavor and a dollop of chocolate syrup on top before I popped the fudge in my mouth!

Dijon Mustard Baked Catfish

This was so tasty and easy! I used Swai instead and honey mustard instead of dijon. Loved the additional flavors from the veggies (sauteed slightly before adding them on top).

Creamy Vegetable Sandwich Spread

I made this with Neufchatel cheese to reduce the fat content, with finely chopped carrots and green onion. No zucchini this time, but I like the idea. Rolled the spread and some leaf lettuce in a flour tortilla for a very tasty light meal.

An exceptional tuna salad - I've made it many times. I like fruit in chicken/tuna salad, so this time I added some halved red grapes. Love it both with and without.
