Sweet Potato Pie VII

The husband is a major pumpkin pie fan, but once he got a taste of this his loyalties turned. I went all out using organic sweet potatoes and Irish butter. I used cinnamon, vanilla, and a tablespoon of grated fresh ginger. It didn't need the 70 minutes. I bake in a convection oven. I pulled it at 63. It was perfect.

Sweet Corn Bread

Consistently good. I use a 9" cast iron round pan that I preheat in the oven, pull out and throw a couple of tablespoons of vegetable oil in before the batter. This gives it a lovely fried-like crust. I substitute yogurt for the sour cream and buttermilk for milk.

Butternut Squash Cakes

What to do with the butternut squash sitting on the counter. Not sure why I bought it in the first place. Soup, nah. The husband likes potato pancakes, maybe I can get away with this. I grated the onion in the bowl with the rest of the ingredients (lazy me), doubled the spice, and added a splash of mustard oil. The texture was smoother than latkes, and the taste of course was Indian appetizer. I served it with yogurt and lime pickle. Initially he was reserved in his praise, probably due to the dreaded squash ingredient. After a few bites he was a convert. Final ruling: "That's a winner."

No Knead Beer Bread

Super easy. My sponge didn't look as moist as in the video, but I persevered. I used some brown ale I had on hand and the bread came out super flavorful. It was served with some red crab soup.

Sam's Famous Carrot Cake

What do you do with 10lbs of carrots from the Costco? Make cake. The first time I made this I forgot to add the eggs. It was still great. Today I remembered them and added 1T fresh grated ginger and 1t dried. yum.

Chocolate Sheet Cake I

Super easy to make with good texture. This is not a "Death-by-Chocolate" cake, but it is very moist. This is the third one I've baked this month. Each one has turned out perfect. I leave it unglazed so the husband can take some on his drive to work.

It wasn't all that difficult and the results were outstanding! Just remember the basic whipping rules; eggs at room temp, whites without a drop of yolk or grease, yolk beaten till lemon yellow, and your cream should be ice cold. Watch that time on the cake. I pulled it out at exactly 12 mins. I frosted mine with "Chocolate Ganache" from this site.

Buttermilk Pound Cake II

Outstanding. My mother raved. I used 2Tablespoons of fresh lemon juice, kept the lemon extract the same, doubled the vanilla, and added 1 teaspoon of almond extract. It drove me crazy to leave it in the oven. I thought surely it would dry out. Not so. It made a crazy good crust.

Fresh Ginger Cookies

Wow! incredible cookies. I changed a few things. I used corn syrup (out of molasses) and substituted 1/4 C of the flour with almond flour (trying to use it more). I scraped an entire vanilla bean into the mix. I chopped fresh and candied ginger into supper fine dice (2-3mm). I left out the final roll in sugar. The husband went wild! He made absolutely obscene yummy noises and hoarded the rest of the lot before our son discovered them.

Five Flavor Pound Cake I

Great texture! Moist and flavorful. With so many extracts the flavor is intriguing. I used rum instead of rum flavoring. I liked pouring the glaze on while the cake was hot. It saved time. With two teenage boys (my son's friend has a baking radar)hovering my cakes rarely make it to cool.

Watch that water temperature! I killed the first batch of proofed yeast with too high a heat and had to throw it away. After that lesson was learned, I've gotten consistently good results.

Peanut Butter Sheet Cake

Wow! I just finished a piece of heaven! I made some modifications that worked well. I used cake flour(Don't forget to add about an eighth of a cup extra)instead of all purpose. I also added about a half cup of mixed white, butterscotch,and semisweet chips in the saucepan with the peanut butter. It didn't need frosting. I served it with a dollop of real whipped cream.

Truck-Stop Buttermilk Pancakes

I reduced the recipe thinking the 12 servings would be too much. It's not! The crew pounded down pancakes as fast as I could fry them. There was a little bit of batter left over. I cooked it up two days latter for my "Breakfast Dinner". It was even better!

Fig Cake I

The husband went back for fourths. I didn't have buttermilk, so I substituted plain milk mixed with my last two tablespoons of plain yogurt and about a teaspoon of lemon juice. It worked great.
