About this Cook
I mostly cook for my husband and my son. Except of course for family gatherings when we all get together and everyone brings something....most of my famuily members have "specialties" that they bring. I have 6 brothers and sisters, 5 of which are married with at least one child so we always have LOTS of good food! It is truly enough to feed an army! I get in moods where I like to experiment and, although it doesn't always turn out great, my hubby is always supportive and game to try something new.
My favorite things to cook
Some big hits in our house are Fried Rice (my hubby is vietnamese), Mexican Chicken Casserole, homemade eggrolls (my mother-in-law's recipe YUM!), Green Bean Casserole, Smoked Pork Loin, and Stuffed Burgers. My hubby and son love my French Toast, too. Imd have to say that my son's fav is my Cheesy Eggs. I make them with 3 kinds of cheese and he loves cheese! I think my fav is a 3 cheese Tortellini Alfredo with garlic and herb. I always have to make enough so we can have leftovers the next day because we love it so much!
My cooking tragedies
It was around Thankgiving and I decided to try to make a pumpkin pie from scratch. So I spent all day in the kitchen, scraping out the pumpkin, boiling it down, making my crust, and after getting it done I popped it into the oven with a smile on my face and a great sense of accomplishment. I was so proud! Well, talk about counting chickens before they hatch.......I pulled the pie out of the oven and.....My first clue that something was wrong was the sickly gray/brown color. I thought to myself, uh oh. I was still hoping for the best as I tried a bite. A second later I was standing over the kitchen dink trying to get the salt/mud/indescribable taste out of my mouth. To this day I am not quite sure what I did wrong! I have never had the nerve to try it again.

Texas Ranch Potato Salad
Followed the recipe exactly. **An absolute MUST to leave in fridge overnight.** I made the mistake of making a couple of hours ahead and no one ate it! Put it in the fridge overnight and hubby took it to work the next day and it got rave reviews!! He loved it and so did his coworkers! I still hear about how good it was! Thanks!......UPDATE: Hubs and his friend have been BEGGING me to make this every weekend since the first time I made it. Making it again tonight so it can sit in fridge until our get together tomorrow. I think this time I will take other reviewers advice and use 1/2 sour cream, just because I'm low on mayo and I am going to try adding a couple boiled eggs as well. Also, I will again add cheddar cheese. Thanks so much for the recipe! It's a hit at our house!

Marie's Easy Slow Cooker Pot Roast
I followed the recipe exactly except I did add a bit of garlic powder. Flavor was great!

Slow Cooker Cassoulet
I gave one star because it was easy as author stated. Used chicken broth instead of white wine, otherwise followed recipe. We found it way too bland with too much bean taste. The chicken was mushy instead of tender. The broth was just bean flavored juice. I served with a crusty delicious french bread. The bread was great, the other not so much.
