Moroccan Chicken and Whole Grain Couscous

This is one of the favorite recipes in my house! I often make it with different ingredients based on what I have on hand, and it always comes out great, although it's definitely best as written. I always use frozen (defrosted) chicken thighs, and I don't even bother cutting them up. Tastes even better as leftovers - yay!

Butternut Squash Risotto

I made this exactly as written, although mine only needed 4 cups of stock. Also, I put in less cheese than called for because it was tasting so delicious without it! Such a simple recipe, and so much creamy goodness. It's going into the rotation for sure.

Pear Coffee Cake

This was okay. My main problem with it is that it tastes like it's a lot healthier than it is. The texture and taste are what I would expect from a cake with whole wheat flour or wheat germ, for example. There are also a LOT of chunks in it. I should have listened to the description, where it is described as a replacement to fruitcake :) Anyway, it still has a nice flavor and is a good use of extra pears, if you like a really dense, chunky coffee cake.

Speedy Ice Cream

So easy and so yummy! It came out super melty, but I like it that way - like a milkshake. I also used 2% milk, so that probably makes a difference. I love having a reduced-fat homemade option for when I get an ice cream craving.

Slow Cooker Stuffing

This turned out super dry for me, but the flavor was so nice, it was still good. We just drenched it in gravy. I'll make it again and try using more liquid...

Sugar Cookie Frosting

Awesome frosting!! I used this on the Best Rolled Sugar Cookies, and they were divine. I used room-temperature unsalted butter instead of shortening, and it worked out great.

The Best Rolled Sugar Cookies

These really are the best sugar cookies I've ever tasted, especially with a nice thick frosting. I made them with some fancy Danish butter for Christmas, and they were amazing.

Boilermaker Tailgate Chili

This is my favorite dinner. I make it exactly as the recipe says, except I use regular pinto beans instead of pre-seasoned chili beans. I also serve it with sour cream and homemade cornbread instead of chips and cheese. Love!

Golden Sweet Cornbread

So yummy. I used only 3 tsp of baking powder. Dried out at the edges when I left it out uncovered for a couple hours, but otherwise very moist.

Baked Whole Cauliflower

Nice, simple way to prepare cauliflower. I leave out the garlic powder and use butter instead of margarine. 4 stars instead of 5 because it is not extraordinary, but good.

Sandy's Chocolate Cake

This is the best cake ever. Make it exactly as the recipe says - you'll never go back to cake from a box again. For those who say it is not chocolatey enough... I don't know how that could be! I find it very rich, chocolatey, and moist, and the sour cream gives it a unique taste that people rave about.

Deep Dish Brownies
