Citrus-Basil Vinaigrette

This is wonderful! We have a Tea Room close by that serves a similar dressing with mixed greens. This is almost exact and it makes me feel good that I am eating healthy when served with the mixed greens. My finicky 10 year old daughter ate this so much she got tired of it.

Potato Chip Chicken

This is a great way to use up those chip crumbs that nobody will eat. Even my pickiest eater loved this recipe. I baked mine in the oven at 400 degrees like another reviewer suggested. I too added Parmesan cheese to the mayo. I used barbecue chips but could see this working with any flavor. I added garlic powder to the chip mix. This will become a regular recipe for us!!!

Very easy. I halved the recipe. I too left out the cream of tartar. Also used this recipe for shortcakes. I just doubled the sugar then added some more to taste. Came out beautifully!

Easy Pizza Sauce III

I needed to feed 3 hungry teenage boys who wanted to make pizza and I was out of prepared pizza sauce. I only had 2 8 oz. cans of tomato sauce and 1 6 oz. can of tomato paste. I didn't have oregano either. So, I mixed 2 tablespoons of Italian seasoning with the tomato sauce/paste mixture. They all ate it and loved it! Thanks for the easy recipe.

Baked Omelet

Made this Christmas Eve and cooked it Christmas day. I used the items I had on hand which was quite simple: eggs, milk, ham, seasoned salt and 1 cup cheddar cheese. Easy and tasted great!

Easy Sugar Cookies

Sooo easy and so good. This is a regular in our house. I bake them for exactly 9 minutes on an air bake cookie sheet. Remove them immediately to cool slightly. Yum yum!

Quick and Easy Alfredo Sauce

Great, easy recipe. I did make a few changes. I used 8 oz. Neufchatel Cheese (1/3 less fat), 1/2 cup Smart Balance buttery spread (instead of butter), 1 clove of garlic, 4 oz. shredded parmesan cheese and 4 oz. grated parmesan cheese, 1 1/2 cups milk. Loved how easy this was!

Easy Chocolate Crackled Cookies

I don't care for the taste of shortening so I too used 1/2 cup margarine instead of the shortening. Before working the dough into balls, I put the dough in the fridge for atleast an hour. It made the dough easier to work with. I also waiting until the cookies came out of the oven then dusted them with the powdered sugar. I received many requests for this recipe and will use it often.

Chive and Onion Yogurt and Cream Cheese Spread

Have you ever heard of HOVAN. They are in malls and make the best wrap of sorts. I used this on a tortilla, added meat and romaine lettuce, rolled it up, then cut it up in serving size pinwheels. My kids love it and is great for lunchboxes. I didn't have the yogurt but otherwise made as written.

Shrimp Scampi Bake
