Thai Noodle Salad

I really enjoyed this dish. My husband did not, but he doesn't really like the flavors in Thai dishes. I used all red bell pepper because that is what I had on had and chicken instead of shrimp. I also added extra Thai chili sauce - I love that stuff! It was better after sitting for a couple of days.

Carrie's Garlic Pesto Tuna Salad Sandwiches

Made this recipe as is and it was okay. I didn't like the flavor the mustard added to it. I love pesto and it's a great way to jazz up boring old tuna, but I will leave out the mustard in the future.

Greek Salad Dip

I made this using kalamata olives instead of regular black olives. I also included some chicken and served it with pita chips. I added a scoop of the lefteover dip to a nice green salad and it was wonderful too.

Flourless Peanut Butter Cookies

Made these for my DH for Christmas. He loved them! They have a very rich peanut butter flavor and were a huge hit. I don't really care for peanut butter cookies and even I enjoyed them. This is my go to peanut butter cookie recipes.

Fresh Broccoli Salad

This is exactly the recipe I was looking for. The flavors are great and measurements were spot on. I like to use sunflower seeds instead of the almonds. It's good with the raisins, but I actually prefer it without.

Whole Wheat Sweet Potato Muffins

We made these Sunday morning and served them with cinnamon honey butter from this site. Very good. I didn't have any ginger so left that out and used applesauce instead of the oil. Had to increase the cooking time to 19min like others and cut the topping in half. Great way to use up an extra sweet potato I had laying around.

Beefy Baked Ravioli

This recipe is super easy. The only reason it gets 4 stars instead of 5 is because I think, as it's written, it needed some garlic and extra seasonings. So the second time I made it I sauteed some onion and garlic w/ the ground beef and added some Italian seasoning to the sauce. I bet using the diced tomatoes w/ garlic and basil would be good too. And it's excellent w/ Italian sausage instead of the ground beef.

Garlic Broccoli

I made this using green beans instead of the broccoli and loved it. It was super easy. Loved the little bit of heat from the crushed red pepper flakes. I will definitely make it again.

One Bowl Chocolate Cake III

Super easy and very good. It is the same recipe from the can of Hershey's cocoa powder. I made an 8" square and 12 cupcakes. The batter is very thin and soupy, but it bakes up wonderfully.

Black Bean and Corn Quesadillas

I made these for my 4-year-old son and I for dinner tonight. We both really enjoyed them. I used whole wheat tortillas and left the red pepper flakes out. Served them with sour cream, salsa, and sliced avocados. A great meatless meal. I think chicken would be a great addition if you absolutely need meat. I will definitely be making these again!

Patriotic Poke Cake

This was good cake, but nothing spectacular. I did like the look of the cake with the colored layers. I've never been a fan of plain whipped cream on cake so I followed Christine suggestions for adding the Cool Whip to vanilla pudding. That was definitely a good choice. This wouldn't be my first choice for a cake recipe based on the taste, but I would make it again for the visual appeal.

Chicken and Red Bell Pepper Salad Sandwiches

I didn't have enough leftover chicken to make the full recipe, so I scaled it to 1 chicken breast. I love the addition of the red bell pepper. I served it on toasted honey wheat bread. Yummy!

Coconut Ice Cream

OMG!! This is so good! It is creamy and great coconut flavor. My batch is still in my ice cream maker and is almost finished, but I just had to taste it. It is wonderful. I put all of the ingredients including the flaked coconut in my blender. It was so easy. I can't wait for the finished product. I'll update my review later to let you know how it tastes, but I don't think I'll have any complaints. Edited 07/14: This is exactly the flavor I wanted. I didn't find it overly sweet. It tastes exactly like the coconut ice cream that was sold at the ice cream shop I worked at in college. Thank you so much for the terrific recipe!

Nutty Brown Rice Salad

I made this for a barbeque and it was enjoyed by all. I cheated and used minute brown rice. I did use more dressing than the recipe called for and my husband said he thought it was still a little dry. The little bit I did bring home tasted even better after sitting in the fridge for another day.

Cherry Chip Muffins

I love maraschino cherries and chocolate so how could I resist this recipe. I left out the nuts because my DD doesn't like them and added a splash of vanilla, but other than that follwed the recipe exactly. They weren't overly sweet which I enjoyed. I will make them again.
