Snickerdoodles II

Just like Grandma use to make. One word of caution. The cinnamon/sugar mixture at the end has a strange ratio when it comes to color. The end resulting cookie looked entirely too brown and not nicely dusted as in the picture.

Sweet and Tangy Sauteed Collard Greens

OMG thank you for a recipe not dripping with animal fat! I've never had collards before but this recipe will be a regular now. I made a few modest changes as I didn't have all the ingredients. I sauted the onion with garlic in a dark sesame oil/evoo blend. Then subbed rice wine vinegar for the basalmic. Incredible.

Cinnamon Cream Syrup

This is incredibly yummy. But I certainly wouldn't call it syrup. Because you don't bring the milk to a boil it doesn't thicken. Next time I will try bringing the entire solution to a boil and hope it doesn't alter the taste. Or perhaps the next day after sitting in the fridge it will thicken. I took anothers suggestion to dip (from a small ramkin but that meant the kids (7 & 4) were almost drinking it. I apply it directly to the pancake next time. Also took the suggestion to put it in coffee and it is a 10 star recipe for creamer.

Exquisite Pizza Sauce

I doubled the recipe for 2 pies. I didn't have a few of the ingredient...marjoram, cayenne, nor anchovy. I reduced the honey by half and it was strangly sweet and missing something. That something is the counter balance so I added in 1/2 tsp of salt. This is a winner of a recipe. I'm sure even better would I have had everything on hand to follow it fully.

Mother's Day Pie

Think custard pie with a floating coconut top. But don't think coconut pie or even flavor. I added 1/2 cup more coconut and it really was indifferent to the taste but over flowed my 9 inch graham cracker crust. This was deliious both warm and cold.

Kentucky Banana Pudding

Who knew pudding was so easy to make. This was a bit more custard in texture then I would have liked. Next time, and there will be many, I'll scale back on the cornstarch or not let it heat so much/long. I'd like it a bit more creamy than custard-y.

White Peach Sangria

Incredible summer drink. I used the peach schnaupps as others suggested. I use the entire can of lemonade concentrate. Since I use a boxed wine I refill the lemonade container (375ml) 2 times with wine to equal one traditional bottle of wine (750ml). Yum, yum, yum.

Smooth Sweet Tea

Great tea. The baking soda is an awesome tip. Though being a GRIT (girl raised in the south) this was too sweet for our house. Next time I'll scale back to half the sugar. I crack up at all the reviews referencing this recipe passing their "southern folk" test. We don't all like super sweet tea nor talk with a twang.

Buttery Soft Pretzels

These are great but a bit of work to roll out ;o) Next time I'll just do pretzel nuggets to save myself some work. I used all of the flour called for with 1 cup being WW the rest being white. It didn't make a difference to the taste nor texture. After cooking we sprayed with ICBINB and topped with cin/sugar. Then dipped in apple cider syrup we had on hand from pancakes. Yummy!

Tuna Fish Salad

What a soupie mess. I increased this to 3 cans of tuna so we would have a stock to eat on all week. I assembled the spices and wet items first followed by the tuna last. I wish I would have scaled back on the wet items significantly. I had to add another can to make this palatable. Truly I could have used a total of 5 cans to get this corrected to the consistancy we like. However, the flavor was good and I even used 1/2 miracle whip and 1/2 plain yogurt.

Vegetarian Refried Beans

I think I'm done buying store bought. I skipped the tomato b/c I didn't have one and, forgot to put the garlic in during the simmer, and didn't want the oil. Loved it none the less.

Cinnamon Raisin Bread I

Just had to write my first review after years of using this website. GREAT bread. Used my bread machine for about 6-10 minutes of kneading, soaked the raisins in hot water before adding to machine for the last few minutes of kneading. Becareful they carry over a bit of water and can make the dough sticky. I'll roll it out thinner next time so I get even more pretty swirl marks. I used extra sugar and cinnamon and wished I wouldn't have it made it a bit more like a cinnamon roll inside rather than traditional bread. But is that really a problem ;o) This bread is better than anything store bought and so super easy to make.
