Old Fashion Molasses Bread

This bread is so delicious, my whole family loves it. I make it with half white and half whole wheat or spelt flour. I usually need to add additional flour as it's mixing.

Downeast Maine Pumpkin Bread

Absolutely delicious! I made 12 muffins and a large loaf and the muffins were half gone before the loaf was even out of the oven. I used leftover butternut squash in place of the pumpkin (a very acceptable substitute I read). I will definitely be making again and again.

Scalloped Potatoes and Onions

These were very good! I was surprised at how creamy they turned out without any milk, cream or cream soup. I made as directed except I was a little short on time so cooked about 1 hour at 375 then 15 minutes at 325. Next time I will add a little something...maybe some thyme.

Jam Filled Butter Cookies

The dough for these cookies was so easy to work with and they were delicious! I made 3 batches to give away as gifts and ended up making another batch just for us (at the request of my husband). I made the holes with the handle of a thick wooden spoon and used a sandwich bag to pipe the jam in. The only change I made was to add 1 tsp of vanilla to the dough. I will be making these every Christmas from now on! Everyone loved them.

Southwest Chicken Casserole

Thanks so much for this recipe. We moved into a new house and are without a stove for two weeks. Normally I find the texture of microwave food horrible...especially chicken. The canned chicken made it work. I love the flavour of the green chiles. My 2 year old kept asking for more chicken. I added two cans of chicken chunks since one didn't seem like enough...other than that I followed exactly. Quick and easy I will make this again even when I get my stove!

Peppery Scalloped Potatoes

Oatmeal Apple Muffins

These were very good. I didn't have any eggs in the house so I substituted 2 tbsp corn starch mixed with 2 tbsp water and added an extra tbsp of oil. Turned out great. Very tasty.

Strawberry Pie II

Very easy and very good! I made these into tarts using frozen tart shells and putting half a large strawberry in each. Served with whipped cream on top (made with a dash of vanilla). Delicious.

Irish Bananas

These are simple and delicious! The first time I made them I looked for a small bottle of Irish whiskey and couldn't find one. Now I'm glad because we make these a lot! So quick you can even make them after dinner.

Dill Potato Salad

I am having a party and my neice is allergic to eggs so I was looking for a good potato salad recipe without mayo. This is quite good. I used fresh parsley instead of dried because it's in my garden! I also added a tablespoon of white sugar which I think gave it the sweetness it was missing without mayo. Quite tasty even though I'm a real mayo fan.

Cyndi's Shrimp Fajitas

This was very quick and easy. I used canned corn instead of frozen and I cooked the shrimp right in with the veggies to save pots (I hate dishes). It was really tasty and quick enough for a weeknight dinner! Will definitely make again. Thanks!

Very tender and falling off the bone. What a great way to cook ribs. I did use BBQ sauce instead of ketchup as other reviewers suggested. I'll be making these often!

Fat Free Refried Beans

I rinsed the beans and cut out the salt entirely as per other reviews. I still wasn't very impressed. To me the smoke flavour didn't seem to belong. My husband liked it however so I still gave it three stars.
