Mushroom and Leek Soup

I followed some recommendations of previous users ... here is my twist to make this soup a 5 start - I used 16 oz of mixed mushrooms (cremini, bella's etc), 4 pre-trimmed leeks (sauted with 2 tbsp of butter & then simmered in 1c of sherry), 50 oz of broth (mix of chicken & veggie), 1.5c of water. I added a bag of chopped baby spinach, 2 tsp of pre-chopped garlic & the orzo! YUM! I had my family over for dinner last night & they loved it.

Tangy Cucumber and Avocado Salad

i didn't have lemons in the house so substituded limes the cucumber and avocado are fresh - but the lime gives it the summer flavour! excellent!!

Easy Decadent Truffles

These were amazing! You must coat the truffles with chocolate! I made three batches. 1. Inside - substitute white chocolate, Outside - melted mini-kisses & semi-sweet chips 2. Inside - used original recipe, Outside - peanut-butter chips, and semi-sweet 3. Inside - used original recipe, substituted mint extract for vanilla, Outside - Andes choc.mint chipts & semi-sweet NOTE: the consistency for dipping chocolate may become thick when mixing other types of chocolate with the semi-sweet, gradually add more semi-sweet to the mixture to obtain desired consistency for dipping.

Thai Vegetable Noodles

I would only add soy 'to taste' - using the exact amount makes this dish way too salty. Next time I'll try non-salt peanut butter & soy as a flavor as needed.

Roasted Garlic Bread

I thought this bread was amazing! Make sure to eat this with the company you'll be spending the night with. && a little bit of the mixture goes a long way on the bread - you won't sacrifice the flavor either.

Beth's Spicy Oatmeal Raisin Cookies

The only thing you need to watch is the time! Do not over cook, or else the cookies will become hard. Cooking till golden brown will ensure chewy cookies.
