Gobble Up Granola Snacks

Reviewed: Jan. 27, 2008
Nice snack and easy to make. Though not necessarily healthy with corn syrup (why does it have to be so yummy though). Anyway. Made my own variation with organic brown rice, brown rice syrup, a bit of wheat germ mixed in as well and then used some cocoa powder in with the peanut butter concoction for a chocolaty taste for the kids and they loved it.

Blueberry French Toast

Reviewed: Dec. 16, 2007
I made this actually with 16 oz of cream cheese... i put down 1 layer of bread first, then small chunks of the cheese, then another layer and another few chunks of cheese. i did use all 12 eggs and by using a crustier day old french bread it was just the perfect amount of egg. i also used frozen triple berries because I had them for both the sauce and casserole. I used an immersion blender to blend the sauce.

Turkey Tetrazzini II

Reviewed: Nov. 24, 2007
This is similar to my recipe so I thought I'd chime in with some help. I cut the butter to 4 T, add 1/3 cup flour mix. add 2 cups chicken broth, whisking constantly. add 1 1/2 cup lt cream or milk. whisk until thickened. add a dash of cooking sherry and then add 1 cup shredded white cheese (parm, mozz etc). Mix in 4 cups cooked turkey. toss with pasta, sauted mushrooms (or cooked peas) and also toss in a 1/2 small jar of pimentos and 1/4 cup chopped fresh parsely for color. put in 9x13 bake 25-35 at 400.

Rempel Family Meatloaf

Reviewed: Nov. 5, 2007
I made a few alterations based on other reviews. I used dried minced onion instead of the soup mix to cut back sodium. I also used cornflake crumbs instead of crackers because that is what i had. I used 2 lbs of meet as well and a slight splash of milk because I don't like bone dry meatloaf. Tomato paste instead of ketchup for less sugar, and finely grated cheese melts internally better.

Swiss Chicken Casserole I

Reviewed: Nov. 4, 2007
This is comfort food at its best and for such a basic recipe it's great! I make it for friends with new babies etc. I use Cheddar not Swiss. And 2 cups of stuff (not sure it that is 8 oz or not) and that is sufficient. I also add some dried minced onion to the soup mixutre as well as garlic salt.

Taco Seasoning I

Reviewed: Oct. 28, 2007
This was just the perfect mix of spices for my taco meat. I try to slow cook a lot to save time at the "witching hour" so I toss 1 lb of (browned) ground turkey, a 14 oz can diced tomatoes and 1 sliced onion in the crockpot, add this recipe of seasoning and you've got delish taco fillings waiting when you get home. Add a can of beans (black pinto or kidney) for an extra protein boost in the last 15 minutes!

Banana Oat Muffins

Very good muffins. I added chocolate chips and put them in mini muffins. I also added a 1/4 of ground flax seed. Next time I'll replace the oil with unsweetened applesauce.

Baked Slow Cooker Chicken

Reviewed: Oct. 25, 2007
Easy recipe, but it pays to read other reviews (the good reviews) that is. Omit foil and add chunks of your favorite vegetables red potatoes, carrots and onions are great place to start. For flavorful chicken season UNDER the skin of the breast and thighs with butter and your seasonings. I don't recommend removing the skin because that is what holds in moisture, but bland if you only season the outside. I used a vegetable dip seasoning, fresh rosemary, coarse salt and pepper. Add 1 cup chicken stock. Then sprinkled with paprika for color on the actual chicken. Cooked on low for 9-10 hours. It was DELISH and not a drop of chicken left. My 3 kids (2,2,5) loved every bite! This is a great EASY way to do chicken.

Turkey in a Pot

Reviewed: Oct. 22, 2007
I made this for a friend with a new baby and used a 3-4 lb bone-in turkey breast. It was AWESOME!!! Not dry at all. I used some left over drippings to make a cranberry gravy and served with acorn squash (Also in a slow cooker). I omit the extra sugar. It didn't need it.
