Sunshine Toast

I've been fixing a variation this for a long time; it is one of my favorite breakfast recipes. The only difference is that I toast the bread seperately and place the egg on top. I find a dash or Paprika and Oregano a nice compliment as well.

Tomato-Topped Sole

Good recipe base; kudos to you! It made sense to me to just saute the onions with 2 garlic cloves in the butter and dump the whole skillet over the fish & tomatoes, though. It cut out the need to bust out the olive oil and made a meal so good I'd kill my mother for seconds!

Almond Sole Fillets

I'd actually like to give this recipe 5 stars; this dish is simple, relatively healthy, and versatile. But I cannot microwave fish-- it ruins the filet by turning it to rubber. I sauted the almonds in cooking spray and then baked all of the ingredients for twenty minutes at 375 degrees. It turned out very good; the spices are spot on. I am going to play around with subtle variations of this for Salmon, so thank you for a new tool for me to abuse!

Corrigan's Minestrone

Fantastic recipe! Kudos to you. I followed most of the directions, but found pureeing the celery and garlic to be more towards my taste-- it provides a creamier, thicker soup without altering the flavor. Still, the method you described works just fine.

Amazing Simple Thai Tofu

Upon reading the reviews of this dish I took it upon myself to embelish as well. I decided to add some fresh cilantro and curry powder (but omitted the coconut flakes-- personal preference). The end result was very good; my whole family enjoyed it, despite being finicky eaters! Good job on a fantastic base, but I suspect it would be rather bland without some tinkering. Still, thanks!
