Big Soft Ginger Cookies

Perfect! Make them flat and chewy by squishing or puffy by just leaving them in a ball. I used lemon juice instead of water...basically anything citrus will work to bring out the ginger, you won't taste the fruit. You can try a dash of cayenne if you like it spicy. I increase the clove (2 tsp) and ginger (3 tsp) and add a dash of nutmeg. I also use egg whites and butter. For kicks, I brush on a vanilla cream cheese glaze but they are great just rolled in raw sugar. Also refrigerate dough for 10 min or longer before making into balls.
