Mediterranean Quinoa Salad

This is SO tasty! After mixing it up as the recipe stated it seemed WAY too saucy, so I cooked another cup of quinoa (as per the bag's instructions: 1 Cup to 1 1/4 Cups water) and stirred it in. I would recommend going a bit easy on the lemon juice and onion, but that's just my personal taste. I threw in tomatoes and cucumber pieces too for crunch, and served it cold. Delish!

Great-Aunt Nina's Noodles and Chicken

The chicken turned out beautifully, I will do that again without diluting it at the end with so much broth. My noodles came out very doughy and I ended up fishing them all out of the dish before serving it. Maybe I didn't roll the dough thin enough? A nice dish that I will try (parts of) again.

Slow Cooker Latin Chicken

Delicious!! My three year old thought it was a bit too spicey...what does she know?! I used a 19oz can of black beans and a can of corn instead of 2 cans of beans, and that's the way I'll contiue to make it. Really tasty!

Instant Rolls

So quick and delicious! I used regular flour with 2 tsp baking powder and 1/2 tsp salt because I didn't have self rising flour. I cut the sugar down to 2 T, which was still pretty sweet, and added a tsp of each italian seasoning, garlic powder and onion powder. It made 8 rolls that were perfect to serve for dinner with a bowl of soup. I'm done looking for a 'dinner bun' recipe!

Aloo Phujia

This was fantastic! I halved the cayenne so my three year old would eat it and it still had a bit of a bite. I used a 14oz can of diced tomatoes because I didn't have fresh ones, I threw in some peas and a pound of cooked chopped chicken thighs to make it a meal. I'll definitely double the recipe next time to have more left over! Sooo good!

Blue Cheese Chicken Wing Dip

I had such high hopes for this dip, but it did not go over well at all. Maybe I used the wrong hot sauce? I used a regular Louisianna hot sauce and we couldn't even eat it! It was SO hot! I do want to try it again, I just have to figure out how to tame it down.**UPDATE** It turned into a four star recipe when I tried it again using Buffalo wing sauce instead of hot sauce. (like the recipe says!) I didn't know there was a difference. Oops. I mixed everything together instead of layering it, and added the dressing until the consistency was right. I will definitely make this again...with the ingredients stated in the recipe!

Spicy Onion Rings

So good! We don't do fried food at home very often, and these were my first try at onion rings...but they turned out great! I never buy egg substitute, so I used 3 eggs with a splash of milk and a few shakes of tabasco instead (and left out the red pepper flakes). I only had 3 onions but there was lots of extra flour/egg/breading to do more. My husband suggested cuting the onions thiner, but I enjoyed them as is. I dried them on a wire cooling rack over a cookie sheet lined with paper towel as suggested, and it worked well - kept them crispy and was easy clean up.

Cucumber and Cantaloupe Salad

This was really tasty! A great change from your everyday green salad. Even my husband liked it. I'll definately make it again, but I'll peel the cucumber, and cut down a bit on the sugar. Very quick to toss together.

The Way to a Man's Heart

Delicious! I used immitation crab meat which was a HUGE mistake. It overpowered the halibut. Next time I'll spring for the good stuff! I also added about a tsp of minced garlic to the sauce, as well as about 1/3 C white wine. Very tasty. Shrimp is a wonderful addition too. I'll definately make this again.

Cousin Cosmo's Greek Chicken

This recipe has great potential, put failed at my kitchen table the way it is written. The feta filling is wonderful, but my flour coating turned gelatinous in the pan! (Very possibly my fault!) I would try it again without using flour, or combine it with the Feta Chicken recipe off this site and bake it. I will try again, but with changes.

Thai Chicken Burgers

Awesome! I tried these with ground turkey and they were so good. I used half mayo/half sour cream for the sauce and it was unbeleivable. My husband who hates Thai food LOVED these (I left out the word Thai when I told him what was for dinner!)I will definitely make them again and again.

Crumbed Avocado Steak

This was quite good. The only thing I would do differently would be to add more, or stronger mustard. My husband thought it was Hollandaise! Very tasty though, nice combination.

Ranch Burgers

These were tasty, but way too salty. I doubled the recipe for a BBQ we had, cooked a couple of the burgers, and ended up adding more beef to mellow the salt out. Next time I would use less seasoning, and maybe try onion soup mix with the ranch. Worth playing around with.

Cabbage Rolls II

These were awesome after a little tweaking. My very picky, cabbage-hating friend even loved them! I browned the beef with 4 cloves of garlic before mixing it with the rice etc. I took others advice and added garlic powder, mustard powder, minced onion and a few spoonfuls of the tomato sauce topping. I also substituted 2 shallots for the 1/4 cup minced onion. I only got 8 or 9 leaves from a head of cabbage (I'm new at this and they kept tearing!)but it worked out beautifully, just the right amount of filling. I doubled the sauce, which is a must. My husband said he preferred less cooked cabbage, but that's fairly impossible in a slow cooker. Everyone really enjoyed them, and I'll be making them again soon.

Brie Cranberry and Chicken Pizza

This is a great recipe, a real change from your ordinary pizza. I made a couple of changes and it came out beautifully: I spread about 2 tablespoons of very garlicy garlic butter on the crust and baked it about 10 min. right on the oven rack. I sauteed the chicken with 5 or 6 mushrooms, sliced, and rosemary and thyme as suggested by other reviewers. I also added slices of red onion(not sauteed). I baked it on a cookie sheet and it came out perfectly. Next time I would cut down on the cranberry, or not use the 'whole berry sauce' it was a bit too sweet. I would also cut back on the mozza a bit- it masked the flavor of the brie. This pizza is delicious the next day too! I will definately make this again.
