Marshmallow Icing

I'm glad that I had read reviews and knew what to expect. Definately sweet! and I'm a sugar lover. Trying not to end up with a sticky mess, I probably overcooked it at 12 minutes...10 minutes would have been sufficient, but 7 definately didn't have stiff peaks. I lost a lot of the icing on the sides of the bowl, so I would probably make a double batch for my next two layer 9" cake and add some scraping. Overall, very tasty on top of my chocolate espresso cake.

Chocolate Velvet Ice Cream

I used my ice cream maker for the first time and was greatly impressed with this recipe. The texture, flavor, and consistency was perfect. The only change I made was to double it.

Home Made Mayonnaise

This was a fun recipe and my first time making mayonnaise. I used two cloves of garlic, put whole into the blender, which made it hot and very flavorful. The kids didn't care too much for it :).

Quick Zesty Chili

I had a bunch of tomatoes that were going bad, so this was a perfect recipe (doubled) to use them up on and it was absolutely yummy! Could use a bit more spice, though, and I am not a big spicy lover. I also used dry pinto beans simmered with onion, garlic, cumin and a bit of chili powder then drained and added to the recipe.

Vegetarian Refried Beans

These were ok. I have to admit that I didn't take the onions out, they had been cooked so long that I figured it wouldn't make a difference, but my beans turned out a bit sweet. Hmmmm. Next time I will make sure and remove them to see if there is a difference.

Squambo

This recipe was a lot of fun. There was plenty of cutting for my children to do and so making it was a family affair. I did add more garlic and used soy sauce instead of 1/4 cup water, but the broth before that was pretty tasty...just had to make it unique :). The cayenne gives it a bit of a kick, but it was ok for all 4 of my kids. I have no idea what Squambo is supposed to taste like, but I think it would be a good way to use up various, fresh vegetables before they go bad. Yum!

No-Bake Peanut Butter Cookies III

Just like my mommy used to make!! My only variation is that I used Old Fashioned oats and changed the serving size to 32. That rounded out all of the measuring :).

Sour Cream Dressing

I thought about a "four star" since I only put in half the sugar, but the flavor was so tasty that I had to give it a "five star". The raw garlic really gives it a bit of a kick which I enjoyed but might be too strong for some. I used it on romaine and tomato salad with a bit of fresh parmesan. Perfect!

Cinnamon Apple Pancakes

This recipe was a family hit!!! I varied it a bit because of what we had on hand and to our tastes: 1C unsweetened applesauce, 1-3/4C Vanilla soy milk, no honey and 2t of cinnamon, everything else was the same. Couldn't believe how yummy and fluffy a whole wheat recipe could be.

Best Whole Wheat Chocolate Chippers

I had run out of white flour and decided to make cookies anyways. I needed a recipe with high ratings and no white flour in it. This one fit the bill and turned out excellent. The cookies were moist and well liked by our whole family and our "white-flour" friends. We are saying good-bye to the white flour and making this our new chocolate chip cookie recipe.
