Flourless Peanut Butter Cookies

Easy and delicious, I did what others suggested and subbed the 1 cup sugar for 1/4 cup white sugar and 1/2 cup brown sugar. My gluten free friends loved them and my hubs didn't even know they were flourless!!

Home Made Top Tarts!

These were delicious, but the jelly was like molten lava when they where heated. Even microwaving them later it was too runny. Maybe I'll try with Nutella next time.

Pineapple Upside-Down Cake VII

Always a hit with my husband! Make sure to put the pineapple juice in the cake mix and use as much butter as it specifies even if it seems like a lot, otherwise the cake will stick to the pan.

Sweet Potato Pie I

First attempt at sweet potato pie at my husband's request, and I followed the recipe as written for huge success!! I did mix the potatoes in a stand mixer and a lot of the "strings" stuck to the paddle so I was able to remove them easily. I will definitely be making this again!

Whole Grain Breakfast Cookies

These are quite delicious and quite forgiving cookies. I made mine with pecans instead of walnuts and also added dried cranberries. I would eat two for breakfast post-workout and I had to keep a secret stash because the hubs loved them soo much! I've made them twice so far and both times a little different but equally delicious!

Best Lemonade Ever

I made this lemonade but swapped out white sugar for agave nectar...yummy! I will say that next time I will used light agave nectar as dark gave it a bit of am earthy aftertaste...the hubs didn't like it.

Sweet and Sassy Hash Browns

Made these this morning and they were delicious. I also didn't have any chipotle chili powder so I used chili powder and cumin. I did omit the brown sugar as I don't like overly sweet sweet potatoes. And I found the same thing as others in that they didn't hold together like traditional hash browns, and started to burn a bit in the first step of cooking. Just keep an eye on them and "flip" when they look brown. Overall a pretty delicious substitute for white potato hashbrowns!

Cornbread and Sausage Stuffing

I've made this two Thanksgivings in a row and one Christmas, and it's ALWAYS a hit! So much so that my sister asked for the recipe and made it for her friends Thanksgiving party. If you don't like traditional stuffing, or just love cornbread, this is definitely the way to go! I made it just as described.

World's Best Lasagna

Made this with my Fiance on Sunday to freeze for the rest of the week and it turned out pretty well. My only caveat (much like others) is that you need to make more of the ricotta mixture. We barely had enough to cover the layers (and certainly not as much as we would have liked).

Smokey Chipotle Meatloaf

Shrimp Lemon Pepper Linguini

My fiance and I loved this one. It needed a bit more pepper for us, but the sauce and shrimp were delicious. We would also keep lemon wedges on the side to squeeze ove rthe dish when its finished.

Beef or Chicken Marinade

Marinated some chicken before my morning exercise so my fiancé and I could enjoy a tasty Sunday lunch! He loved it from the second he smelled the marinade. I did leave out the green onions because we didn't have any, and I reduced the amount of oil used. Grilled, our chicken was delicious!

Spicy Orange Teriyaki Marinade

Used this marinade for turkey breasts and it was delicious! My fiance likes spicy so this worked well for him. We substituted Thai chili sauce for hot sauce because we already had it.

Fish Tacos

These are yummy! I will say, I floured, egged, and breaded the fish then put it in the oven at 400 for 6 minutes on each side. Resulted in crispy delicious fish that were healthier than fried ones. Yum!

Addictive Sweet Potato Burritos

My fiance and I really liked these. Four stars because we used black beans instead of kidney like other reviewers said. We also didn't mash the beans, but left them whole. Quite tasty and filling.
