Sweet, Sticky and Spicy Chicken

Super delicious! Doubled the sauce ingredients but left the hot sauce at 2 tbs. Threw a little cornstarch slurry in to help thicken and also threw a bag of frozen stir fry veggies I steamed at the end. Flavor of the sauce is wonderful.

Broccoli Bean Pasta

Didn't have much in the fridge or pantry, typed in beans, pasta and broccoli and came up with this recipe. It was quick, easy and was enjoyed by everyone. Only change was that I used canellini beans instead of garbanzo. I think using the white wine was better than veggie broth.

Marinated Pork Chops

Great marinade, left out salt and Worcestershire sauce, added honey and a dash of liquid smoke. 25 minutes is a little too long to cook chops, more like 15.

Fat Free Refried Beans

These were yummy and easy. I used pinto beans and eased up on the salt and pepper. I also did not use the liquid smoke. The onions were a little strong, so I added another can of beans (half mashed). Next time I may saute the onions before or lower their amount.

Slow Cooker Chicken Creole

This was yummy and easy. I cut up my chicken into pieces and added some turkey kielbasa. I added some extra cans of tomatoes, I like lots of juice, and then added a little cornstarch at the end to thicken it up.Delicious.

Connie's Zucchini "Crab" Cakes

This was super yummy and super easy! I shredded the zucchini in the food processor, then put it in a colander and squeezed some of the water out. Ate it on buns with tartar sauce, lettuce, and tomato. It was delicious and I was surprise how quickly I could get it all together.

Eggplant Parmigiana Caponata

This is a very distinctive tasting dish, the kind you either love or hate. I loved it, thought it was tasty and different, my hubby hated it, wanted to know why I put barbecue sauce on eggplant. If you are looking for a more traditional italian tasting sauce for on top, I would suggest cutting way back on the vinegars and sugar. If you like something new, than leave it as is (maybe still less brown sugar!).

Egg Paint

This was so easy and my cookies came out looking great. I actually just used half a yolk and some food coloring (2 egg yolks to make 4 colors) and painted designs on egg shaped sugar cookies. The colors were bright and it couldn't have been easier. I will remember this when Christmas rolls around!

Pumpkin Pie Squares

This tastes really good, just like pumpkin pie. I would have liked the crust to be a little crisper, perhaps I will try to cook it longer, the filling definately needs to be cooked longer too.

Artichoke Pie

This was very different and great. I used marinated artichoke hearts and covered the pie for a while when baking, the cheese may brown a little too quickly if you don't. A must for any artichole lover.

Coq au Vin alla Italiana

Super tasty, great if you are looking for a nice dinner to impress with. I used boneless chicken breast, not a dark meat fan. First time I left the breasts whole and served with garlic mashed potatoes. Second time I cut the chicken into bite size pieces and served it over pasta. Great both ways!! Does make a lot too.

Eggplant and Pepper Parmesan Sandwiches

This was delicious and different. Thought the eggplant might taste bland, but the goat cheese really added flavor. Couldn't find tapenade, so I used a small jar of olive pesto I found. I also used goat cheese with roasted garlic and basil in it, used skinny Italian bread (scooped a little bread out of the middle), wrapped all in tinfoil and toasted it in the oven. Great stuff!

Dijonnaise Chicken

This tastes simply like chicken with bland mustard on top. The oil made the sauce greasy and the only thing that saved the flavor was that I sprinkled lots of extra lemon pepper seasoning on top as it was cooking. Unless you absolutely love mustard, I would skip this one.

Grilled Chicken with Herbs

This was absolutely delicious! I threw everything in the food processor to chop & mix, then poured it over chicken in a plastic bag to marinate, couldn't be easier. Grilled up great, chicken was tender and juicy, even the leftover pieces we heated up the next day.

Easy Tomato Chicken Marsala

This dish was delicious and easy too. I added the mushrooms as suggested, which was an excellent idea. Also found it serves nicely over orzo pasta, which the kids like better than rice. Great recipe!

Mexican Bean Pie

This was good and easy. However, I'm a big fan of spicy dishes and found this to be slightly bland. Would definately add more spices, perhaps chipolte peppers, to the bean mixture and maybe a layer of salsa inside the pie. Some fresh cilantro would be good too. And the recipes really serves just 4.
