Easy Pilaf

Not only is this simple recipe super yummy, but it can EASILY be turned into some of the best fried rice you've ever had!! I made a double recipe of this, adding only peas. The next day there was a ton left over and I wanted more of the egg flavor, so I decided to head up some leftover rice by frying it in a pan, broke in an egg and scrambled it in, and then added soy. OMG!!! It's the best fried rice I've EVER had, like Habachi style and sooooooo yummy, that I actually use this as the base for my fried rice now!

Classic Peanut Butter Cookies

I've been making this recipe for over 4 years now, and people consistently ask me to bring these to gatherings. I do make a few changes as recommended by others, and have it down to a science now. Here are my changes: Use 1/2 cup extra flour use 1/4 cup extra peanut butter - CREAMY to balance the crunchy portion add one overflowing tsp vanilla bake 9 minutes instead of 10 Perfect.

Best Chocolate Chip Cookies

It's true what everyone is saying. The texture is perfect, crispy outside, chewy inside. I followed the recipe exactly, and my only complaint is that it is too sweet. I wanted more chocolate taste and it was too masked by the sugar. I think next time I will cut the white sugar in half and use salted butter instead of unsalted. Otherwise, a wonderful recipe.

Yummy Sweet Potato Casserole

Great recipe! The only difference is that I added a few dashes of cinnamon to the topping and put marshmallows on top for the last three minutes in the oven. Perfect! I'm used to overly sweet casseroles that leave me wishing I could taste the potatoes. This was a perfect! Still obviously sweet, but I can taste the potatoes. My husband, who loves his family overly sweet version (yuck!), was still very happy with this one! Will definitely save for our next holiday meal!

Guacamole Deviled Eggs

Ok, so first I should mention that I LOVE avocado. I mean LOOOOOOOOOOVE avocado, and am always looking for ways to add it into recipes, etc... In deviled eggs, it just doesn't work. I think the problem is that while I love avocado, I also love deviled eggs, and this certainly was nothing even close to a deviled egg. The mustard kick is lacking terribly, and the avocado (even with all the added ingredients) is simply too plain with a boiled egg white. Still planning on making it? Well here are my tips...cut the avocado amount in half and cut the lime amount in half...and even then, watch out. Luckily I only made half a dozen so I was able to save the last half and make regular deviled eggs. WAYYYYY better!

Broccoli Chicken Casserole I

I've made the recipe twice in the past week.... The first time I added some of the ingredients suggested in the reviews: I used an extra can of soup, subbed 1/2 can of milk for the mayo, added an extra cup of cheese so that one was mixed in the casserole while the other cup topped it, and I cooked the chicken in chicken broth seasoned with chicken seasoning. I also used a whole box of stuffing mix and cooked it before topping it on the casserole and added sauteed mushrooms in the mix. It was good but needed some tweaking The second time around was a hit. My boyfriend said he liked it better than the first and my sorority sisters inhaled the dish at our potluck last night. One sister told me it was the best casserole she'd ever had and another has already asked for the recipe...the trick is instead of topping the casserole with the cheese and stuffing, mix it ALL together. Then I topped the whole thing with bread crumbs. It was so much better than with the stuffing on top. Oh yeah...and I added yet ANOTHER cup of cheese. Needless to say, no more tweaking is necessary. Awesome, and thanks so much!
