Southwestern Roasted Corn Salad

I am invited to a 4th of july picnic and I plan to bring this dish because I know it will go great with whatever they put on the grill...burgers, chicken or ribs. This is light, refresing, and tastes great.

Broiled Tilapia Parmesan

Fast, super easy and probably the best fish I've ever had at home or in a restaurant. My fiancé is a real meat and potatoes guy and only eats fish when I beg. He loved this recipe so much that he is taking all of the leftovers to work for lunch.

Coconut Shrimp I

Mildly sweet and very good. Xtra Jumbo's were on sale so I thought that bigger is always better. Not in this case. I had to put them in the oven to make sure they were done so I will be sure to go with a smaller size next time. I also made a dip with mayo, duck sauce and honey mustard.

Corn and Crab Bisque

I followed the recipe exactly and it was a little time consuming in the middle but well worth it. I served it on Christmas and it was a big hit! I can't wait to make it again so I can keep it all to myself.

Grand Marnier Brownies

After trying this recipe, I am definitely going to make brownie trays instead of the traditional cookie trays as gifts. Coworkers and family loved them so I made two more double batches tonight. I tried one with Grand Marnier, one with Kahlua and one with Peppermint Schnapps. The orange had the strongest flavor but Kahlua was my favorite. Great recipe! Thanks for making my Christmas baking so easy!
