Creamy Banana Bread

I'm about to start letting my bananas over ripen just for an excuse to make this bread more often! I left out the nuts and added an extra tablespoon of brown sugar to the filling, also added a tsp of cinnamon to the dry ingredients and a bit of extra vanilla to the wet ingredients, and then sprinkled a bit if the cinnamon/brown sugar mixture on the tops before baking. I always use mini loaf pans, so this recipe is a little bit too much batter for my 3 minis, it made 3 muffins too, which turned out great! Next time I might ditch the loaves all together and just make muffins!

Best Big, Fat, Chewy Chocolate Chip Cookie

I have always thought my chocolate chip cookies were "okay" but that a professional baker always had better. This recipe proved to me that I can make awesome chocolate chip cookies at home. I measured the dough in a measuring cup after putting it in the fridge for about an hour and then again betweem batches just to keep it cold. They took a few minutes longer to cook than what was called for, eventually got nice and golden brown yet still very chewy when they cooled. Will definitely make again and know they'd get top dollar at a bake sale.

Black Forest Cake II

The cake turned out well, tasted great even though I substituted the bing cherry juice for the kirshwasser because I couldn't find that in any liquor store around here. If I make this again, I will definitely hold off on putting the whipped cream icing on it until I got to my final destination as it sort of slid off the cake during transport. Even though I couldn't find the cherry brandy, I did put a little Creme de Cocoa along with the vanilla in the whipped cream and got lots of compliments on that. I would actually consider sprinkling that on the cake instead of the brandy just for a try. I also put mini semi-sweet chocolate chips on top of the cake instead of the chocolate curls with some cherries that I reserved. I am also not a big "at home" coffee drinker, so I didn't have a teaspoon of strong coffee on hand, so I mixed up some extra strong cafe mocha mix, which did give the butter cream filling a nice coffee like flavor.

Michelle's Peanut Butter Marbled Brownies

Wow!!! These brownies are DELICIOUS! I only saved about half a cup of the chocolate mixture to put on top of the peanut butter and it was just enough to get a pretty marble effect going on the top. Other than that, I followed the recipe exactly and baked for about 3 extra minutes because they were still gooey in the middle after 35. People were talking about them hours after they disappeared at work, will definitely make again!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

The cupcakes turned out excellent! People at work were practically fighting over them. I will concur with the other reviewers who said this recipe makes WAY TOO MUCH frosting. I doubled the batch because it says it only makes 12 cupcakes, but I actually ended up with close to 50, which I thought I was generously frosting until I was done and there was still a full two cups of frosting left!!! And I didn't double the frosting recipe! I also didn't have any orange extract so I put a dot of lemon extract in and it gave the frosting a nice citrusy flavor without being overpowering. I put an entire 20 oz can of crushed pineapple (which I drained, but not very well) in the cake batter because I didn't feel like wasting it. I will make these again, but maybe not so many!

Baked Lamb Chops

I was a little nervous because I've prepared lamb before, but this recipe is very simple. I, too, added honey and drizzled them with it when I flipped them, my boyfriend really appreciated the extra sweetness. I shortened up the cooking time by only a few minutes to make sure they weren't over done and they were perfect!

Chocolate Chip Cookies V

I didn't feel like searching for the White Chocolate pudding mix, so I used French Vanilla, they still turned out great! Very soft and chewy, even the ones I thought I overbaked are moist, so don't be afraid to let them brown up a bit, especially if you want a better "traveling" cookie.

Chocolate Banana Bread
