Crustless Spinach Quiche

This has become a breakfast/lunch staple. It's so easy to change depending on what you have on-hand. I usually use a combination of fat-free cottage or mozzarella cheese. I also usually add mushrooms to the mix and diced tomatoes on top. I like to make them in muffin tins-perfect portion control.

White Bean 'n' Ham Soup

Great dinner or lunch! I like to put all of the ingredients in the crockpot before I go to bed...ready when I wake up the next morning! Only change- turkey ham. It's great to freeze in individual sized containers for pack-and-go lunches. Yum!

Rachel's Tomato Basil Soup

Weeknight favorite! Great with low fat grilled cheese sandwiches on whole wheat bread. I omit the butter and use fat free half and half instead of cream...still wonderful and much more figure friendly!

Guilt-Free Mac 'n' Cheese

Edible, but not wonderful. I really wanted to like it since it's a healthier Mac n' Cheese choice. Perhaps extra cheese sauce would help...it turned out a little bit dry. I will probably try it again to give it a second try!

Red Raspberry Vinaigrette

Delicious! I used sugar-free jam to cut the calorie count. Great on baby spinach leaves with walnuts, low-fat feta cheese, mandarin orange slices, and dried cranberries.

Whole Wheat and Honey Pizza Dough

I'm always trying to find healthy alternatives to family favorites, but this will not be a keeper. Unfortunately, this dough made a fairly tasteless cardboard-like crust. Worth a try though...maybe it will work for you!

Eggplant Parmesan I

I'm not sure I should rate this recipe since I made so many changes... To make this healthier, I used fat free cottage cheese, fat free mozzarella cheese, and 1/3 less fat Parmesan cheese. You'd never even know that it was low fat. I also added spinach and mushrooms. Yum!
