Modenese Pork Chops

Based on other reviews, I used olive oil instead of butter. I left out the salt and pepper because my family members aren't big fans of either. I also threw in some mushrooms and onions right before adding the white wine. My pork chops were so large, I barely managed to squeeze them into the pan side by side, but 20 minutes was the perfect amount of time to simmer them for. My family loved these! My dad actually insisted I leave the recipe with my mom because I'm moving out next week and he can't wait to have them again. I think my favorite part was the juice created by the wine; I'm sure it would be wonderful thickened up into a gravy to serve over mashed potatoes.

Sweet Scallop Stir-fry

Delicious! The Brussels sprouts seemed to absorb all the sweetness of the syrup, which contrasted wonderfully with the salty soy sauce and bacon. I only think it would be better if the sauce was thicker- somehow I thought the maple syrup would make it thick, but mine turned out really runny with no sauce clinging to the noodles. Nevertheless, the flavor was wonderful!

Rosemary Roasted Turkey

Apparently I forgot to review this after making it for Thanksgiving! This was the first time I have ever cooked a turkey, and it was also the best one I've ever tasted. My parents and siblings all agreed that they've never had a better Thanksgiving dinner. Tip: definitely brine the turkey overnight. I did in a saltwater solution with some extra fresh rosemary and a lemon. It made is sooo juicy and worked wonderfully with these ingredients.

Roast Pork with Maple and Mustard Glaze

I cooked this on Christmas for my family, and everyone loved it. I used a 6 pound pork loin, so of course it took closer to 2 hours to cook. I had plenty of sauce without scaling up, though! I had no Dijon mustard, so I used spicy brown mustard that was in the fridge. Delicious, incredible, will definitely make again- soon!

Spanish Rice II

This is very similar to a recipe my mom has made for years. The only differences are that she doesn't brown her rice, and she always adds ground beef- sometimes with the addition of sausage. Also, she usually doubles or triples the recipe, as this is one of my family's favorite meals. She makes a huge pot and we all eat the leftovers for a day or two. I like adding grated cheddar cheese to mine. Delish.

Swanson® Ultimate Mashed Potatoes

I've made these potatoes several times, and the only thing I can say is that they're simply amazing. Every ingredient is perfect. I cooked them with my sister recently to feed four people and tried to convince her that she needed to double the recipe to eight, but she didn't seem to think we'd eat that many potatoes. After one bite she wished we had made more. My skinny, perpetually 85 pound sister kept going back for more until it was all gone, and then she cooked them again a few nights later! Best mashed potatoes I've ever had.

Whipped Cream

Wonderful! I made this as written to serve over French toast with strawberries, and everyone agreed it tasted better than store bought! Not quite as sweet, but that was a plus for us.

Cajun Seafood Pasta

This recipe was delicious! However, I had trouble getting mine to really thicken while simmering. Simmering it an extra 10 minutes didn't seem to help much, either, so I added some extra cheese- provolone, as that is what we had. I also didn't have any white pepper, but didn't care to substitute any black pepper in and it still tasted good. I tossed the pasta with the sauce, and it ended up tasting wonderful at the end. Great recipe!
