Luscious Lemon Snaps

I wish I would have read more reviews...too many high star ratings with modifications made me think at a glance that these would turn out as is. Mine spread out way thin and I was disappointed (too much oil, as it turns out, and as many have remarked). They honestly look like a little stack of pancakes, not cookies at all :( I MAY try again with less oil, but will probably experiment with other recipes first...just needs too many modifications.

Coconut-Curry Lentil Stew Served over Quinoa

Really excellent recipe. I halved it, but then omitted the water and used the whole can of coconut milk. I added some coconut instead of powder and used green onions. I made my quinoa in my rice maker (2 to 1 water:quinoa) with a broth cube, though I will only use half a broth cube in the future. I also used canned tomatoes that had been run through a processor (I don't like chunks) and only one cup (for the halved recipe, but I could have used more, I suppose). I don't know why someone would say this is flavorless. It's not so hard to add more curry! I just eyeball everything anyway, and maybe I added a bit more molasses, which I really think makes it wonderful. Great recipes, and gluten free! **update: I have recently made this again, and my halved version is a pint of tomatoes, no water, and a whole can of coconut milk. For our leftovers, we ran out of rice and so had it in tortillas (curritos, we call them) and that actually might be my preferred way to eat this from now on.

Hearty Harvest and Ham Stew

My husband loved this, and I was surprised at how flavorful it was without broth. The cabbage and spices really make it nice with the ham. I did not add greens the first time but am adding some to the batch I'm making now. I agree with one reviewer though, you need MUCH more than just 1 cup of water...I just add enough to make sure it's all covered. A keeper in this house!

Quick Szechwan Sauce

Read previous reviews and was glad I did...scaled the sugar way back (it bears remembering that traditional ketchup is almost all high fructose corn syrup, so extra sugar is not necessary). Didn't have chiles so i used a tablespoon or so of sriracha sauce and also added some wheat-free soy sauce (before the soy, it tasted too ketchup-y to me). Most asian sauces are all high fructose corn syrup or made with wheat (a no no in our house) so it was nice to finally find one I could make with ingredients on hand. Very good with our veggies over rice. thanks!

Russian Green Bean and Potato Soup

Strong flavors...not a soup for every day, but great when you're tired of chili and chicken noodle. I made this with soy sour cream and rice flour for my wheat/dairy free husband and added carrots. Use lots of dill, it goes will with the sauerkraut and leaves pretty green flecks everywhere. Also great with swiss cheese grated on top.

I make this instead of bringing boring baby carrots to work with lunch...can be made with orange juice instead of lemon, walnuts instead of almonds as well. good stuff!
