Chocolate Chip Banana Muffins

Reviewed: Nov. 29, 2010
This may be the best muffin I've ever made. It melts in your mouth. I made a few slight changes - subbed 1/4 cp light brown sugar for 1/4 cp of white and used sour cream instead of yogurt. I also added a bit of milk (probably 1/8 cp) when the batter seemed dry but that may have been because I used light sour cream (maybe not as creamy) and was a Tbsp or two short of banana. Loved these!

Yogurt Chocolate Chip Cookies

Reviewed: Nov. 21, 2010
When I wanted to bake cookies but was out of eggs, I tried this recipe. It was good. Not as good as a regular chocolate chip cookie but still good. I substituted sour cream for the yogurt.

Rosemary Lemon Grilled Chicken

Reviewed: Jun. 27, 2012
Excellent. I used olive oil and didn't marinate, just coated the chicken with it then sauteed in a bit of olive oil. My husband and I both enjoyed the taste and he isn't even a huge fan of lemon.

Iced Pumpkin Cookies

Reviewed: Oct. 18, 2010
I took this to a fall themed baby shower and a church event. I've never had so many people tell me how good something was. I think it would be great as written but I used 1/2 cp of brown sugar for 1/2 cp of the white and slightly changed the spices - 1 1/2 tsp cinnamon, 1/2 tsp nutmeg (no change there) and just 1/4 tsp of cloves because they can be overwhelming. The glaze was wonderful and gave a perfect finish. For those who had issues with this recipe - I fluff then measure flour, leveling the cup with a knife, beat the butter and sugar for a couple of minutes, then also beat the mixture for a couple of minutes after adding the egg, pumpkin and vanilla. This gave it a perfect texture. I flattened and smoothed the cookies before baking for a nicer looking final result.

Good Old Fashioned Pancakes

Reviewed: Aug. 9, 2010
This makes delicious pancakes. I add more egg (1/2 to whole large egg) and the pancakes taste like those at a famous restaurant here in Nashville - one tourists stops at when passing through town. I do cut the salt in half - and use unsalted butter in the recipe.

I chopped the apple and didn't use the topping this time. (will probably try it next time) They are light and delicious. A hit with my husband.

Carrot Cake III

Reviewed: Dec. 24, 2009
I followed gneebeanie's suggested changes - but left out the nuts because some don't like them - and it's excellent. Everyone loves it. It's been my dessert for three Thanksgiving dinners and today's Christmas Eve dinner. I made it once without the pineapple and it wasn't quite as good.

Chive Garlic Bread

Reviewed: Dec. 12, 2009
Excellent! I used a parmesan & romano blend of cheese I had. The topping stretched to cover two thin loaves of French bread. I took it to a church group and it was enjoyed.

Apple Strudel Muffins

Reviewed: Sep. 19, 2009
These muffins are wonderful! I gave it 4 stars because I used some of the changes noted here - I chopped 1 cp apple, shredded 1/2 cp, used 1/2 cp brown and 1/2 cp white sugar, added 1 tsp cinnamon, a pinch of salt and cut back vanilla to 1 tsp. I've made them several times but this time also added about 1/4 cp of chopped pecans and that really made them. They're a definite hit with my new husband.
