Traditional Style Vegan Shepherd's Pie

Wonderful recipe. Took to a Christmas potluck where, by chance, the host had made a beef version. Some guests told me they preferred my vegan version. Two small changes: added a splash of vegan Worcestershire sauce. Also, since I mistakenly bought vegan sour cream rather than vegan cream cheese... used the vegan sour cream but added a little nutritional yeast. Delicious! By the way, I used Lightlife Smart Ground crumbles and Daiya cheddar-style vegan cheese.

Spinach and Bean Casserole

Very tasty. Since I didn't have a pressure cooker, nor time to soak and cook dried black-eyed peas, I used canned organic black-eyed peas. And here's a happy accident: I mistakenly used too much salt, so to counteract it, I added some cooked macaroni to the finished dish. Nice addition. By the way, the baking step at the end may not be crucial, but your call.

Vegan Mac and No Cheese

I'm a cheese lover transitioning to a vegan diet, and I loved this recipe. We added some cheddar-flavored Daiya cheese substitute in the last 10 minutes or so, and it really got pretty cheesy in taste and texture. The dish is a bit oily with all the cashews - hence the four stars instead of five - but still, this is very good as an occasional treat. Next time, we will try adding green pepper and/or tomatoes.

Six Threes Ice Cream

Really great recipe. Made this to accompany my husband's lemon pound cake. I halved the recipe so that my Cuisinart ice cream maker could accommodate it. I used a mini food processor to blend the bananas first to prevent any pulp problems... Also added a pinch of lemon and orange extract for some extra citrus zing.

Egg and Sausage Casserole

Excellent dish. I used ground turkey sausage and it came out just fine. I followed the advice of other reviewers and used 10 eggs, just 2 cups (total) of cheese, 3/4ths cup of milk and Italian seasoning. Also, I pre-baked the crescent rolls for 7 minutes or so, and baked the entire dish at 350 .

Grandmother's Buttermilk Cornbread

Very good. I felt guilty eating something made with a stick of butter, but it was really moist, smooth, slightly sweet, and holds up well as a leftover.

Oatmeal and Wheat Flour Blueberry Pancakes

Far and away the best pancakes I've ever had! So good you could eat them without syrup or butter. Made no changes except sneaking in a few extra blueberries. Used vanilla soy milk.

Asian Orange Chicken

Nice recipe. We loved the way the orange flavor permeated the chicken after marinating, even before we poured on the sauce. (We marinated our chicken for just under the two hours, but it turned out great.) Works well with rice and broccoli. The broccoli seemed to help counteract the sweetness of the chicken dish, which can be overwhelming if you put too much sauce on your plate! A little sauce goes a long way.

Pie Crust IV

I was nervous about making my own crust, but this turned out well. Used half shortening, half butter and pre-baked the bottom crust with a little egg white brushed on. Thanks for the suggestion about using a pastry cloth. I ran out and bought a pastry cloth and a roller-pin cover and I had none of the usual problems with dough sticking to the pin, etc.

Chicken Pot Pie IX

This was excellent. My family all wanted seconds. One suggestion: If you boil the chicken and veggies in enough chicken broth (instead of water), you can just use that broth to make the sauce with the onions, flour and spices. Just make sure it's well seasoned. I added poultry seasoning and garlic powder to my cubed chicken before boiling. Only other modification: For the veggies: In addition to the celery, I used 1 cup of diced potatoes and 1 cup of a blend of frozen peas, carrots and green beans. For the crust, I used Jan Bittner's Pie Crust IV recipe found on Allrecipes.com, but made it with half shortening, half butter.

Baked Garlic Parmesan Chicken

Yummy recipe. Mine came out very tender and juicy after I made a few minor modifications: 1. Pounded the chicken breasts to flatten out a bit. 2. Seasoned the chicken with poultry seasoning, garlic powder and Italian seasoning. 3. Marinated the chicken in buttermilk for about 90 minutes. (Even tossed a little spice in the marinade for grins.) 4. Blended the garlic cloves and olive oil together in a mini-food processor. 5. Used Panko bread crumbs. I definitely will make this again. We served with a side dish of noodles and alfredo sauce.

Big Soft Ginger Cookies

To quote my husband: "Those are so addictive!" This is a very simple recipe that makes deceptively good cookies. My only suggestion is to refrigerate the dough to make rolling it into balls easier. Also, we didn't want to use margarine, so we substituted a half-cup of butter and a quarter-cup of Smart Balance transfat-free shortening.

Banana Cake VI

The cake was as awesome as people said it was. I didn't have a 9x13 pan available, so I made it in three 8 inch round cake pans. Fabulous. The freezer thing really worked. By the way, mine came out fine after just one hour in the oven at 275. Maybe because it was separated into three pans? Anyway, definitely this is a keeper!

Baked Slow Cooker Chicken

I'll have to try this again to see what I did wrong. We tried injecting the chicken with a homemade marinade that contained some lime juice. My chicken came out tender, but also mushy in texture. We ended up throwing out the leftovers. I think the base recipe idea is good, however, and I plan to try it again without the injected marinade. Like others I put chicken broth in the bottom of the crock pot, and used potatoes and carrots instead of foil to go under the chicken. At least those modifications were at a good idea!

Barbecue Chicken Casserole

Five stars for its simplicity alone. Very tasty. Had to cook the corn separately because we missed the 30 minute time mark, but the casserole was good nonetheless, even without the corn. We used thin-sliced boneless, skinless chicken breasts, which we seasoned and marinated first (using a little balsamic vinaigrette and olive oil). Added a little garlic to veggies. Also added some spices to the flour. Used olive oil for the browning and sauteeing. Will definitely make this again.

Slow Cooker Chicken and Dumplings

Excellent recipe. Since we have concerns about sodium, instead of using a canned soup, I made my own cream of chicken soup using a dry mix recipe that is widely available on the Internet, including this site, I believe. Like others I used chicken broth instead of water, gave the dumplings 1.5 hours to get ready, shredded the chicken, etc. Absolutely delicious!

Easy Mint Chocolate Chip Ice Cream

Good recipe. I only wish I'd broken up the mini choco chips a bit so they would have blended better. I used whole milk instead of 2% and reduced the recipe to 6 servings to fit my Cuisinart ice cream maker without overflowing.
