Marinated Pork Tenderloin

Reviewed: Apr. 8, 2007
I am not a very experienced cook, and I was still able to pull this one off. I took some others' suggestions to make gravy out of the sauce, but I guessed at how much cornstarch to add, and I think mine was a little too thick... But for the recipe, I tripled the marinade (dinner for 11) for about 9 lbs of tenderloin. I marinated the pork for about 6 hours before roasting in the oven. I roasted it at 350 for about 40 minutes (until the meat was 150). I let it sit for about 15 minutes before serving. Everyone raved and asked to take home the leftovers.

Green Beans with Cherry Tomatoes

Reviewed: Apr. 8, 2007
This was a big hit at my dinner party. I doubled the green beans and tomatoes (dinner for 11) but I left the other ingredients alone-- to keep it a little lighter. I loved it, and I got tons of compliments. So easy!

Italian Chicken with Pesto Potatoes

Reviewed: Aug. 20, 2007
I pretty much followed the exact recipe. We thought this was great. The reduced balsamic vinegar was an amazing taste with the chicken and cheese. My husband said "Wow" when the first bite hit his mouth. Thanks. We'll make this again.

Curried Chicken Tea Sandwiches

Reviewed: Feb. 19, 2008
Thanks for this recipe! I made this for bridal shower, and it was the one item on the table of food that people asked to take home as leftovers! Everyone loved it. I did make the tiniest changes in the recipe. I subbed in baby spinach leaves for the lettuce since I had some leftover in the fridge. I left out the green onions because I don't like onions. Also, I cut the bread into heart shapes.

Balsamic Bruschetta

Reviewed: Feb. 19, 2008
I made this for a bridal shower, and it was a hit. I prepared the tomato mix the night before and toasted the bread about 15 minutes before the party started. I liked the cold mix on the warm bread. I also appreciated that this could be prepared the day before!

Kielbasa with Peppers and Potatoes

Reviewed: Mar. 14, 2008
Really enjoyed this meal. I cooked the pepper (with 1/2 an onion and some garlic) in a separate pan. Then I put the potatoes and meat into the pepper pan for the last five minutes-- that way I left some of the meat grease behind.

Wine Marinade

Reviewed: Dec. 24, 2008
I changed the recipe a little bit based on what I had in the house. I only had a soy sauce marinade, which is really just soy sauce and sugar. So I used 3/4 cups of the marinade instead of 1/2 cup and I used 1 1/2 tbsp of sugar instead of 3 tbsp. I also used brown sugar instead of molasses. The wine I used was a shiraz. The marinade was delicious, and I'm sure it would be even better if I followed the ingredients more precisely!

Brown Sugar Meatloaf

Reviewed: Sep. 13, 2009
This was a great recipe. I read the other reviews and made a few small changes though... I only had 1 1/4 lbs of turkey, so I changed the ingredient quantities to make 6 serving sizes instead of 8. I didn't go down to 5 serving sizes because I added 2 shredded carrots and 2 chopped celery stalks and 1/4 cup of chopped onion. I soaked the bread crumbs in the milk as suggested. I only had plain bread crumbs, so I added 2 teaspoons of italian seasoning to the bread crumbs. I also added a pinch of garlic powder. I used shredded cheddar and monterey jack cheese because that's what I had. And finally, I added 1 tbsp of brown sugar to the ketchup. I only cooked to 160 degrees (which took almost an hour) and let it rest under foil to 165. The meatloaf was flavorful and moist. I will definitely make it again.

Turkey Tetrazzini II

Reviewed: Nov. 28, 2010
This was a good way to use up my turkey leftovers. I sauteed some onion and garlic in the saucepan before melting the butter. I also added some seasoning and some white wine. When I mixed the sauce and the pasta I threw in a cup of frozen peas. Overall it was a little plain, but still tasty.

Salmon with Lemon and Dill

Reviewed: Dec. 24, 2012
I thought this was great. I had two pounds of salmon, but I didn't quite double the other ingredients. I used 6 TBS of butter, 6 TBS of lemon juice, a heaping TBS of dill, and two cloves of chopped garlic which I mixed together. I got a lot of compliments. Thanks for the recipe.

Brown Rice and Black Bean Casserole

Reviewed: Sep. 25, 2013
This is a great recipe- so easy to adjust to what you have on hand. I had raw chicken, so I cooked it with the spices above with some diced carrots. I used cooked rice in a bag (just one bag). I didn't have onions, zucchini, or mushrooms, so I threw in a half cup of frozen corn. I also used cheddar cheese. Everyone had seconds.
