Sweet Potato Cookies II

Reviewed: Feb. 26, 2010
I made this recipe for my cooking club as the theme was Cookies and I wanted something semi-healthy. I made with all organic ingredients, replaced all purpose flour with all whole wheat flour, added a little more honey, added cinnamon, used vegan butter in place of regular butter, added 1/2c to 3/4 c zucchini and 1/2 bag of chocolate chips. I baked on stoneware so it took about 15mins. They were a little cakey but they were a hit!!

Reviewed: Jan. 15, 2009
LOVE IT! My son (3yr) doesn't like blueberries and refuses to eat them if in his pancakes...but LOVES these muffins! I make this recipe about once a month. They freeze very well. I add lots and lots of blueberries and they turn out great everytime. Great recipe! Thank you for sharing.

I don't care for anything canned so this was perfect for my family. My husband made this and turned out better then what I could have done.

Mom's Zucchini Bread

Reviewed: Oct. 30, 2008
THE BEST EVER! My mom and her mom must have been friends cause this is the same recipe that has been in my family for years! I add lots of cinnamon, a little nutmeg and a little more zucchini then required. (my own little spin) I make this at least once a month and turns out great every time. (Note: If you add more zucchini, may cook longer due to moisture)

Banana Banana Bread

Reviewed: Oct. 30, 2008
I added cinnamon and nutmeg to my bread. I think it gives it more oomph of flavor. I make this bread at least 10 times a year and even make “muffin” size for my 3yr old. Sometimes it will need to bake longer. Overall, one of the best!

Fudge Chunk Brownies

Reviewed: Aug. 24, 2008
Also, these brownies were flat but served with homemade ice cream and became a hit. I would not make again. If I did I would have to add baking powder/soda. Also, to mask the flatness I added small squares of chocolate to the top and it melted perfectly. Lot's of chocolate!

Pumpkin Pancakes

Reviewed: Aug. 24, 2008
I only made the pancakes. They are very good. I added a pinch more baking powder & 3 tbsp more flour (I like fluffy pancakes) and nutmeg and pumpkin spice for added flavor. I had to cook them a little longer than normal pancakes to ensure their cooked all the way through. These are a favorite!!

Pancake Stack with Syrup

Reviewed: Dec. 7, 2006
This was my first time as well making pancakes from scratch and it was a success. Just as good as my friend Bisquick! Per the reviewer below, sometime adding a little more flour will thicken the mix or let stand a few minutes can work too. Variation: I made with all organic ingrediants and added slightly pureed banana for fruit flavor.

Apple Orchard Punch

Reviewed: Dec. 7, 2006
This is great for the kiddies at a holiday party. They feel included with their "own" type of drink. And for those adults that choose non-alcholic drinks, this punch can still look pretty in a lovely glass with a garnish.

Slow Cooker Oatmeal

Reviewed: Dec. 7, 2006
Family Loved the recipe! I made it a few survings more then stated and filled the slow cooker. Variation: (1)I added cinnamon and chopped apples (2) Didn't add the half and half, just milk to taste. My son (1.5 yrs) loved it.

Lemon Kiss Cookies

Reviewed: Nov. 23, 2006
I made this recipe with three variations: (1) All ingrediants were organic (2) I had no lemon juice only extract (3) I used dark chocolate kisses instead of milk chocolate. Recipe came out great although, I do not recommend the lemon extract. The flavor of the lemon juice is a lot better.

This turned out great for my cherry fruit pies. I was hesitant at first to make this recipe but I am glad I did as my husband who doesn't like sweets really enjoyed. Variation: I added a pinch of nutmeg to the recipe for a little added flavor.

Zucchini Cookies

I made this recipe but had to add a little more flour than called for. Although, I did make with all organic ingredients so that could be why. The cookies were great. Tasted like mini zucchini breads. Variation: I added chocolate chips to the recipe and turned out great.

Baked Stuffed Pears

Reviewed: Nov. 23, 2006
This is a great recipe. I didn't have any lemons so I used orange where it called for lemon and still came out great. I served with ice cream when the pears just came out of the oven and was a hit.

I too enjoyed this recipe! My first time baking apples and they were wonderful. I also cooked my apples a little longer than recommended for softness. Great with whipped cream or ice cream.
