Sausage Stuffing

Made this for Thanksgiving for my boyfriend who loves stuffing. I browned the sausage and then put it all into my crockpot which turned out great! It was really good, and I don't care much for stuffing.

Cranberry Bars

I cannot say enough good things about these bars!!!! I had slightly less than a bag of fresh cranberries left over from Thanksgiving and it worked fine. Easy and delicious. I had to freeze several after a few days because I kept eating them!! Bonus that they made the house smell divine.

Coconut Macaroons

I can't believe how easy and delicious these were! I made them to give away for holiday gifts but I hope I can avoid eating them all. I didn't change a thing. I beat the egg white to soft peaks. I will definitely make them again!

Easy Batter Fruit Cobbler

This was so delicious and could not have been easier. I used frozen mixed berries and brown sugar instead of white on top. SO YUMMY!! My boyfriend thought I'd been baking all day. Little does he know it took 5 minutes to put together!

Vegetable-Stuffed Portobello Mushrooms

These were yummy! As a vegetarian, I am always looking for delicious, healthy recipes. The only thing I will do different next time is to omit the marinade step. Like others said, the balsamic vinegar was overpowering. I think they will be delicious without it, just stuff and bake!

This was delicious! Easy to prepare and great to take to work for lunch, as it doesn't need to be refrigerated. I added feta cheese, substituted cilantro for the parsley and reduced the olive oil to 1/8 C. I will make this again and again!

Country Pasta with Mozzarella

Absolutely delicious!! My boyfriend and I had two big plates and then stood over the pan and finished the rest WITH OUR FINGERS!! It was that good. I did use 4 cloves of garlic (and next time I'll use even more, 5-6), next time I'll also add a bit more cayenne pepper. I left out the parsley, just didn't have it. A bit greasy, I might sub turkey bacon and cut the cheese in half to save calories. Very tasty, definately will be making this again!

Slow Cooker Lime Chicken with Rice

Very, very bland. I even added garlic, poultry seasoning, salt and pepper and a bay leaf. Still so bland that I just can't eat it. Too bad. Not sure of the point of the lime juice, I couldn't taste it at all.

Slow Cooker Enchiladas

This was pretty good. I used one lb of ground beef and a can of black beans (drained) to stretch it a bit. I just layered it like a lasagna. It's messy but my boyfriend devoured it. My tortillas didn't get mushy.

Spanish Flan

This was really delicious and easy to make. It is not what I am used to from flan, what I usually get at the Spanish bakeries is more dense. But this is quite delicious. Smooth and creamy. I used 5 eggs, mixed it all in my blender. I heated my pan in the oven for a few minutes before pouring the melted sugar in. I didn't have any problems melting the sugar, just stood over it and stirred until it melted. Somehow my pie pan cracked when I poured in the sugar. Also I baked it for 60 minutes in a water bath but the middle was still quite jiggly and I wasn't sure if it was done--did some research and flan should be jiggly in the middle.

Puppy Chow

I made this yesterday and took most of it to work today. My co-workers just went nuts over it, most of them had never even heard of it. Very good and soooo easy! I followed suggestions, used 8 C cereal, and added 1/2 stick of butter and 1 tsp vanilla and it came out fantastic! After you add the choc/pnut butter mixture to the cereal, put it in the fridge for 5 min or so to let the choc harden, makes it easier to add the powdered sugar.

The Best Banana Bread

Seriously, this is just delish! I made this yesterday and although it took an hour an 20 minutes to bake (not sure why), it was well worth it. Tastes even better today. I used half brown sugar, half white sugar, added cinnamon and vanilla as others suggested. Yum!! I will make this again and again.

Tuna Noodle Casserole from Scratch

I was disappointed. I was so excited to try this tonight but this recipe came up short. It was pretty dry and lacking in flavor. I followed the directions exactly except that I cut back on the butter a bit for health. It needs something else (besides butter), and my mom's was always very creamy. I guess I'll get her recipe! I doubt I will make this again.

Quick Pasta Sauce

I've made this a few times now and it's great! I had never made pasta sauce before but hated the idea that I had no control over the ingredients. This is perfect, can be changed to suit tastes and takes hardly no time at all. I use a lot of garlic, a sprinkle of red pepper flakes, and sometimes add olives too. I also add a can of diced tomatoes because I like a chunkier sauce. Very easy and good.

Scones

Just finished scarfing down one of these fresh out of the oven. Yummy! These are easy and I like the fact that they don't require buttermilk and therefore are a little healthier. As others said, the dough is sticky but in my experience with other scone recipies, it always is. Just flour your hands and surface well and don't worry about it. Also I found that greasing the baking sheet is not necessary. I did not use a non-stick sheet and did not have a problem with sticking. My mom makes amazing scones and she always tells me not to over-work the dough, only knead it about 5-10 times and then leave it alone. I added a cup of chopped hazelnuts and 1 tsp of cinnamon. Next time I'll try dried cranberries. Delicious!

Old Fashioned Rice Pudding

I just finished a large bowl of this...yummmm! It is creamy, delicious, warm and comforting. Just like mom used to make. I didn't change a thing, except to add a little cinnamon when I added the vanilla and then again when I served it. (I love cinnamon). Cooking times were perfect for me. I can't wait to start on the leftovers!
