Dinomite's Fluffy Bites

Who knew kale could be so mouthwateringly yummy?? Not me, buster! And really, I still don't know because I left the kale out and put bacon in instead. YEAH BABY!!! NOW WE'RE TALKING!!! Two thumbs up!

Delightful Apple Spice Muffins

I did a double batch of these for my daughter's sleepover breakfast and they were gone in ONE DAY! The kids loved them! I used whole wheat flour and Splenda. Delicious!

Pumpkin Gingerbread

I just baked these and everyone loves them! My changes: all whole wheat flour (subtract 2 tbsp per cup used to equal white flour); 1 cup Splenda & 1/2 cup Splenda brown sugar blend for all the sugar; an extra 1/2 tsp each of ginger & cinnamon; Ener-G Egg Replacer (contains no eggs at all) for the eggs (I have an egg allergy); cinnamon applesauce for the oil; and orange juice for the water. This is nice, spicy, moist treat! I made 3 dozen mini muffins (baked at 325 for 12 minutes) and one 8x4 loaf (baked at 325 for 40 minutes). Just delicious!

Chicken Pot Pie II

A good basic recipe, to which I made the following changes: skipped the celery (don't like it) and potatoes (didn't have any); I used boneless breasts that I had cooked earlier in the week; I used 2 crushed garlic cloves instead of garlic powder and sauteed them with the onion; I added a can of cream of mushroom soup to help thicken it up. I also put in a bottom crust. It was delicious and my family loved it tonight! I will make it again but with these same changes.

Chicken Enchilada Soup III

This was EXCELLENT! I did the one change of using the 28 oz. can of enchilada sauce instead of the small can and a cup of water. I also didn't measure the chili powder or cumin but just dusted it into the soup. So very good! I had company and they raved about it too! I served it with a dollop of sour cream and tortilla chips. This is a keeper!

Homemade Mac and Cheese

Great mac & cheese! I used 2 cups cheddar and one cup shredded monterey jack. I forgot the paprika but I put in a little dry mustard, garlic powder & onion powder. I used breadcrumbs on the top and sprinkled oregano over that. Very tasty!

Moist, Tender Spice Cake: Gingerbread Variation

This recipe is fantastic! I baked it in the alternate method of two 8x8 pans. I frosted one with cream cheese frosting and left the other plain. I substituted whole wheat flour for white flour and brown sugar Splenda for the sugar. So moist, spicy and delicious!! A real hit with the whole family! I'll be making this again!

Banana Bars

This recipe was a hit with my family! I just baked them this afternoon and we've all had two pieces already. I substituted whole wheat flour for the white, Splenda for the sugar and cut it by half, butter for the shortening and cut THAT by half. I also used an extra banana and added the cinnamon as so many others had recommended. I omitted the walnuts (son is allergic) and skipped the frosting. They came out so light and tasty!! Very pleased with this recipe and will make these again!

Addictive Pumpkin Muffins

These are excellent! I made half a batch and they were all gone by the next day, I used whole wheat instead of white flour, and half Splenda/half Splenda Brown Sugar Blend instead of sugar. I also left out the nuts for my son's who is allergic. I made mini muffins which only took about 12 minutes to bake. So tasty!! The whole famiky could not get enough!
