Easy White Chicken Enchiladas

Oh man. I just made this recipe as a gift for my brother, who doesn't cook, and my mother, who just started radiation treatment for breast cancer and is too tired to cook. I doubled it and sampled an enchilada for myself, and it's one of the best things I've ever made off this website. I followed it to the letter. It's got the perfect amount of "kick" to it. The filling was easy to make. The enchiladas were easy to put together. I don't think I could have asked for anything more!

Praline Strips

I love pralines and have always wanted to try making them, but was reluctant because it looked complicated. (I am no good with a candy thermometer.) I tried this recipe because it looked easy, and it sure was! They came out so tasty. I used cinnamon graham crackers, which was nice. I think I found a foolproof praline recipe in this. Thank you!

Quick Corn Chowder

Pretty bland. I was rather disappointed. It also had too much corn; it was more like a dish of corn with some potatoes, all in a liquid, rather than soup that happened to have corn in it.

Pumpkin Custard Pie

It tasted pretty much like regular pumpkin pie to me. I was hoping it'd be nice and light and fluffy, but it wasn't. Maybe I didn't cook it on the stovetop long enough, but I cooked it for a good 10 minutes. I'll try another recipe next time.

Spinach Cheese Ball

It was OK, and everyone loved how cute it was when I shaped it into a tree, but the taste wasn't anything spectacular. It wasn't bad, mind you; I liked it fine, but it didn't knock my socks off. It seemed like it could use some kick. Maybe I'll use more soup mix next time, or Tabasco.

Oklahoma Cheese Grits

Really very good! I too am something of a purist when it comes to grits, so I didn't use seasoned salt, but garlic powder instead. I wish I hadn't added the Worcestershire. Next time I'll go without. I also didn't need the entire block of Velveeta; it was plenty cheesy with about 3/4 of it. The consistency was nice and creamy; the taste was great. I was able to mix it the night before, and pop it in the oven on Christmas morning.

Portable Chinese Chicken Salad

The taste was really quite good. Needed more of the dressing though, so next time I'll multiply the ingredients a bit, and make it less vinegary. But the crunch and taste were really great, esp. since I added water chestnuts per others' reviews. I'm keeping this one in my recipe box.

Fabulous Fruit Salad

I didn't include the celery (I never like celery in fruit salads), and I needed more than 8 oz. of yogurt. They didn't have 8-oz. containers at my grocery, so I got two 6-oz. and ended up using all of both of them because it just wasn't enough to use 8 oz. only. Even then, it was only so-so. I'll keep looking for a good fruit salad.

Mock Champagne

I used sparkling grape juice and put fresh raspberries in the ice ring. It was perfect. Close to real champagne taste, but just sweet enough so that the young girls at the bridal shower enjoyed it too. Everyone commented on how good it tasted and how pretty it looked. I enjoyed how easy it was to put together. What else could I ask for? Thanks for a great recipe; I'm saving this one for all my parties!

Spiced Pumpkin Seeds

I just tried these tonight and pulled them out of the oven not two minutes ago, and they're perfect. My first attempt at pumpkin seeds last year ended in disaster. Thankfully, the good folks at allrecipes.com make it so I can rely on other cooks' experience and suggestions to make sure that doesn't happen again. After reading the reviews, I doubled everything except the Worcestershire for the 2 1/2 cups of seeds I had, substituting seasoned salt for regular salt, and baked them at 300 for an hour, plus 8 more minutes for that extra crunch. I did use Parkay butter spray and sprinkle on Parmesan for that last 8 minutes. They're the perfect texture and taste. I'm putting this one in my recipe box. Thanks for a great recipe, Carolyn, and thanks to everyone else for their comments that helped me make such a great snack!

Chocolate Mint Brownies

I made these for Christmas this year, and many of my relatives declared it an instant favorite. It was quite easy. They cut nicely into squares and came out of the pan easily. I added a bit of green food coloring to the mint layer to make it look the part. I'll definitely use this one again.

Purple Monstrosity Fruit Smoothie

I replaced the orange juice with fat-free vanilla yogurt and it was much better. The juice made it too tart; this is much tastier as a creamy smoothie than a juicy smoothie.

Veggie Burgers

These were just awful. After all the time I took with the vegetables, when I mixed it all together it was so sticky, it was unbearably difficult to work with. And they didn't cook evenly at all; areas were either barely cooked or burnt. They didn't taste one tiny little bit like hamburger like it claimed. I hope they do better as fertilizer in my yard than they did on the dinner table, cause that's where they ended up. I think I'll stick to the store-bought veggie burgers from now on.

Mini Frittatas

I've been trying to go vegetarian, much to my meat-loving husband's dismay. I made these for dinner the other night and he was delighted. "Keep that recipe!" he told me. The only thing I might suggest is using more spinach and less eggs; it was a smidge too chewy for me. And of course more garlic. You can always use more garlic!

Peppermint Bars

I did not like this recipe at all. The dough was extremely sticky and hard to work with. The directions said to bake until firm, but after the time specified it collapsed when I poked it, so I kept it in, and then it got hard on top. Even then, the dough was still sticky and dense, and greasy from having to grease the pan. I was barely able to get it out of the pan at all, let alone in nicely sliced bars. It was a terrible mess and I'll never try that again.

Maple Meltaways

Nice and buttery, kind of like shortbread. I ran out of pecan halves, so I finished up dipping the tops into pecan pieces, and it worked just as well. Next time I might try rolling them in pecan meal. Very easy to make.

No Roll Sugar Cookies

I was looking for a recipe to mess with to make a peppermint cookie, and this was a winner. I omitted the vanilla and cream of tartar and added 1/4 c. finely crushed candy canes (down to pretty much a powder) and 2 1/2 t. peppermint extract. Then I rolled them in more crushed candy canes and sugar (probably about 1/3 c. and 1/8 c., respectively), and did not flatten them. They turned out extremely well and have become my favorite Christmas cookie this year!

Eggnog Thumbprints

This is the best Christmas cookie I've ever made. I first used it two years ago with fantastic results: I won the area cookie contest, plus it's become an instant tradition in my family, in that everybody wants some, and I probably won't be allowed in their houses at Christmas without them! They're easy to make and so delicious. I recommend them highly.
