Gale's Grilled Shrimp

Reviewed: Feb. 2, 2009
I have to admit I knew I would like this- but I didn't expect to love it as much as I did! Even my husband who doesn't care for shrimp ate two whole skewers of them! So delicious and so simple! The only thing I did different was sprinkle them with a little garlic salt right before they went on the grill as I hadn't marinated quite two hours and was afraid the garlic flavor hadn't infused. Make sure you use a beer you like cause the beer flavor is really prevalent. This recipe has me wondering what else I can marinate in beer and garlic cause the flavor combo is amazing!! Thanks so much Gale!

Tasty Tuna Burgers

Reviewed: Feb. 2, 2009
I loved these and will probably be making them often! I did add the Old Bay seasoning, and didn't use the dill. A litter heavier on the Worcestshire and hot sauce as well according to my own tastes. I found increasing the bread crumbs and decreasing the mayo made them a little sturdier. It also will help if you use the white albacore as opposed to the chunk lite tuna. It is a little drier. As for the people complaining about texture- it is still tuna so it will be a little mushy, but I cooked mine on an indoor grill on the solid side and cooked them til they were browned on both sides and heated through. They came out wonderful! Thanks to the chef for a new great way to prepare tuna!!

Pork Roast with Thyme

Reviewed: Jan. 30, 2009
I made a 1.5 lb pork roast in my crockpot on high for 1.5 hours. I really liked the seasoning but unfortunately it didn't cook long enough to temper the strong flavor of the vinegar. Luckily I love the flavor of vinegar. I added the rosemary as the other reviewers said, also chopped up half an onion and threw in some frozen baby carrots. The vegetables came out delicious!!!! I love the vinegar/thyme/bay/rosemary infusion in the carrots so much I am planning to experiment on a cold carrot salad with the vinegar/thyme dressing. Maybe simmer it all on the stovetop and then chill. Thanks so much for the great flavoring! Oh the meat was tasty as well, I should have started it earlier and slow cooked it though!

Potato Soup

Reviewed: Jan. 24, 2009
This is a great starter recipe. I put a little garlic in with the onions, then add diced raw potato, leaving some chunks larger than others. Then put the potato in the sauce pan with the onion, salt and pepper them and let it fry a little so the potatoes get a nice flavor going. Then I add chicken broth and bring to a boil til the potatoes soften.Lastly the milk or cream whichever I have on hand. I always add bacon crumbles and garnish with shredded cheddar and a glop of sour cream. The only reason I don't give this recipe 5 stars is I think it needs another seasoning but I haven't quite figured out what yet. My picky husband asks me to make this all the time, though.

Onion Rice

Reviewed: Jan. 19, 2009
This came out great! If you use yellow onion I suggest using only half a small onion. I added 2 small garlic cloves as well. I will definitely be making this on a regular basis. Delicious! Thanks for a quick and easy way to make a great side dish!

Potato Soup with Fish and Cheese

Reviewed: Dec. 18, 2007
This soup is creamy, delicious and filling. I followed the recipe exactly, although next time I might use a splash of white wine. This would also be great with langostinos and white wine and scallions. Will definitely make this again! Thanks for the recipe!!

Sloppy Joe Sandwiches

Reviewed: Oct. 13, 2007
This is a great sauce! I did add the chili powder and vinegar to cut the sweetness down some. I also recommend using organic/all natural ketchup as it tastes way more like real tomatoes and is not sweetened with high fructose corn syrup. Since my husband does not like green peppers I subsituted finely chopped pickles which gave a nice crunch and added flavor. I will never buy another can of Sloppy Joe sauce!!

Hawaiian Chicken II

Reviewed: Jul. 15, 2007
This is very good! I cut the brown sugar to 1/4 cup and added a pinch of red pepper flakes and it was still sweet enough but not too sweet. After 40 minutes in the oven the sauce was still thin but delicious and the chicken was cooked perfectly! Served over creamy coconut rice. I would definitely make this again.
