Grilled Eggplant and Feta Farfalle

I''ve made this twice, and it got rave reviews. (Would have used 5 stars, but I did make substitutions.) I used quinoa instead of the pasta to make it gluten free, and had to skip the grilling step on the eggplant and just sauteed it (along with zucchini and yellow squash--did all in nice chunky pieces since another reviewer said the eggplant, if cut small, doesn't come out being the star of the show.) Gorgonzola crumbles were on sale, so used those. Will make again and again. Thanks!

Pesto Sauce

Simple, and simply delicious. I had just made a chicken soup that needed "something." I added a spoonful of this pesto to my bowl and that was IT!

Lentils And Spinach

I made this tonight for a Syrian friend. He loved it, as did my husband. As suggested, I substituted chicken broth for the water, and steamed fresh spinach (because I had an abundance.) VERY tasty. Will definitely make it again.

Spicy Beef Curry Stew for the Slow Cooker

The whole family loved it. We served it over brown rice. I had some left over roast beef, which I just chunked up/half shredded. I'm a wimp, so no jalapeno, but others added spice (Scorned Woman hot sauce). I will DEFINITELY make again (and again.) It contained three ingredients the hubs loves: beef, rice, and curry.

Marrakesh Vegetable Curry

This was excellent. Hubby said he'd definitely like this on the menu again. The house smelled SO GOOD for two days after cooking it. (There's something about heating the spices in the oil that really releases flavor and aroma.)

Lemon Iced Tea

To speed up the chilling time, boil only 2 cups of water. In the meantime, refrigerate 6 cups of water and the lemon juice. (Or put several cups of ice in a large measuring pitcher, then add cold water to the 6 cup line.) After the tea bags have steeped, dissolve the sweetner in the hot tea, then add the tea mixture to the lemon-water mixture. Continue to refrigerate till chilled.

Sweet and Spicy Sweet Potatoes

Excellent! Reducing the olive oil to 1 T is the only modification, although some of the other suggested spices (cumin, cinnamon, curry) may make in to future editions in my kitchen.

Crystal's Chocolate Chip Pumpkin Cookies

This was EXACTLY the recipe I wanted! Cake-like, sweet without being over sweet. Love it. I'm saving this one. (I didn't have pumpkin pie spice so added 1 tsp cinnamon, 1/8 tsp cloves, 1/8 tsp allspice, and 1/4 tsp nutmeg. I also substituted brown for white sugar.)

Grandma's Sugar Cookies

The flavor was GREAT, but they came out like frizbee cookies. No, I didn't melt the butter. Are you SURE you're suposed to put 2 CUPS of sugar?

Cinnamon Roasted Sweet Potatoes

I made this last year, using the suggestion of less oil and a seasoned stoneware pan. Who needs traditional syrupy sweet when you can have loads of flavor? Love it! Definitely doing it again this Thanksgiving and Christmas...and any other time. The lime is a great touch.

Curry-Coconut Shrimp

The flavor was excellent, but I suggest using a 14 oz can of coconut milk and tripling the spices. There was not enough sauce for a pound of shrimp.
