Artichoke Chicken

This was great! As suggested, I used half sour cream and half mayo; I also cubed the chicken instead of using whole breasts and, per my husband's request added a few sliced mushrooms and roasted red peppers. We had it served over wheat spaghetti- and it was awesome! Even my 3 year old ate it, much to my surprise. We will definitely make this again.

Sunday Brunch Eggs

Vegan Lasagna II

Very good! I sauteed a chopped onion with the garlic. Then I added a dash of nutmeg, a liberal sprinkle of vegan 'Parmesan', and a can of artichoke hearts, minced, to the spinach mixture. Awesome, awesome! Looking forward to leftovers for lunch tomorrow...

Mini Cheesecakes I

Absolutely fantastic! Made them for a family gathering and they were gone in minutes! Only changes made were a little more vanilla and a bit of lemon zest... This is going into my permanent file.

Ash-e-jow (Iranian/Persian Barley Soup)

Lime and turmeric with barley- what an intriguing combination! I started with homemade vegetable stock made from peelings... and sauteed the onions, carrots, and turmeric together- with a couple cloves of garlic- before following the rest of the recipe exactly... delicious! What a wonderful use of rather inexpensive ingredients! We'll be eating this regularly from now on- thanks for the great recipe!

Perfect Apple Pie

Very similar to chana masala. A can of coconut milk 'smoothes' out the curry flavor- and don't forget to add sauteed onions, if you can, it totally makes the dish!

Poor Man's Fried Rice

Have made several times... the missing ingredient? GARLIC! I used three cloves to the oil and it made a HUGE difference. If you like spicy, a pinch of chili flakes is really good, too.
