Spinach Ranch Salad

We LOVE this recipe. We make our own bacon bits for it and its wonderful. Add some crusty bread on the side and you're in for an AMAZING meal!

Avocado Tacos

Definitely a good side-dish as-is. But add some black beans, some cheese, and whatever else you might like in a taco and these things are awesome as a main dish! Everyone liked the guacamole, which was the star of the dish.

Brazilian Black Bean Soup

We did the recipe mostly as-is (I don't like peppers, so I skipped the red pepper). Not too salty for us, and the orange juice was perfect. We found that we really liked spreading the (very thick) soup on some bread. It was awesome!

Homemade Manti (Traditional Turkish Dumplings)

Whew! This is not a recipe for beginners! It took me about 2 hours of straight work to get this recipe finished. It was really awesome when we actually got to eat. I was proud, but exhausted!

Lentils and Rice with Fried Onions (Mujadarrah)

I made it for all of my housemates- there are 10 of us!- and everyone loved it. I even had a housemate eat the stuff I burned at the bottom of the pot. On a related note- be aware that these are small serving sizes. For ten people, I'd make enough for 13 or 14 servings according to this recipe.

Magic Spice Cake

Awesome cake! I made cupcakes with it, they took about 20 minutes to bake. It made about 19 cupcakes with a little bit left over. I would have liked it a little spicier, which is why I did only 4 stars instead of 5. I'd go ahead and use 1 tsp. of spices instead of 3/4. Also, if you're gonna frost it- use cream cheese frosting. I am not an experienced baker and just looked for an easy frosting recipe (which was a buttercream recipe). Didn't go so well. They both taste awesome separately, but together...

Tasty Tuna Pasta

We used frozen peas, so it took a little longer to cook. I would say to use about a quarter to a third less peas, unless you really really like peas. They were a little overwhelming.

Sour Cream Chicken Enchiladas

We substituted black beans for the chicken. I used about 1.5 cups dry and had about a half a cup left over after I used them in the recipe. My boyfriend and I really liked it. Also, we used soy cheese and had to cook it about 15 minutes longer to ensure that the cheese melted, and it still came out just fine. I was planning on giving it four stars rather than five because the sauce is really unappetizing to look at... pink with green specks of cilantro. But... We reheated some of the leftovers in the morning and added some scrambled eggs on top and it was an awesome breakfast too! So I gave it 5 stars.

Quick Creamy Spinach and Tomato Pasta

Really, really good! I put in as much spinach as I could, as others have suggested and it was awesome. We also added in more pesto- try 1 1/2 or 2 tablespoons. Really easy and really fast. Thanks!

Teriyaki Tofu with Pineapple

I was definitely not impressed with this recipe. The flavors sound promising, but the recipe will need to be altered to the point where it would become unrecognizable. If you do want to follow this recipe- I would not marinate the pineapple with the teriyaki. I would use very low sodium teriyaki and use only 1 cup. Use extra firm tofu.

Brandied Candied Sweet Potatoes

I made it three times over the Thanksgiving holiday (three different Thanksgivings... mmmmmm) and every time, people wanted the recipe. Its delicious, and I recommend cooking it longer than the recipe says by an extra 20-30 minutes.
