Slow Cooker Spicy Black-Eyed Peas
This is an awesome dish! We made this for our New Year's Day black eyed peas. My mother in law HATES black eyed peas, but my father in law always makes her eat a big dish for good luck. She gobbled this dish up and raved and raved about how good it was. I love that its really easy to prepare - it took us about 15 minutes to chop everything up and add it to the crock pot. I used mesquite smoked ham from the deli cut on the thickest setting and also got the thick cut bacon from our deli. When I did a taste test when it was almost done my husband and I thought it was missing something, so I added a bit of chili powder and oregano. We both thought it was perfect afterwards. I didn't use the cayenne pepper the recipe called for because we used a huge jalapeno and didn't take the seeds out. I was spicy, but not unbearable. We like spice though! I think this will be a new year's day traditional dish for us now!

Grandmother's Buttermilk Cornbread
This cornbread is awesome! Just sweet enough and very moist. I thought I had over baked it, but it was perfect - a little crispy on the top but soft and moist inside. I followed the recipe exactly.

Creamy Swiss Chicken
I halved the recipe, but didn't use a full portion of the wine. It tasted all right, but I didn't like that the sauce spread so much and we had to scoop it back over the chicken. Next time I think I'll make the following changes: Season the chicken a bit before putting the cheese on. It was a tad bland for us. I'll also cook the chicken a bit, then put the cheese on. Heat the sauce on the oven and then pour over the chicken with approx. 5 min of cooking time left. Sprinkle croutons (no butter) on the chicken and broil for a couple minutes. I'll re-review after my second try.
