Brown Sugar Oatmeal Pancakes

Great recipe! I made a couple changes and it turned out fantastic. I used 1 mashed banana in place of the oil and I added raisins to the pancakes. They were delicious! I also used vanilla soymilk in place of the milk and egg substitute for the egg. They were gobbled up very quickly!

Maple Carrot Cupcakes

These turned out pretty well. I made a few modifications to make them healthier and omitted the frosting and called them muffins. I used 1/2 splenda 1/2 sugar in place of the sugar and sugar free maple syrup in place of the maple syrup. I also used 1/2 applesauce and 1/2 oil in place of the oil. I used an egg substitute as well to make them vegan. Try this recipe, it's definitely a keeper!

Vegetarian Meatloaf with Vegetables

This recipe turned out pretty well. I didn't have the vegetarian worsteshire sauce, so I used soy sauce. I also used egg replacer to make it vegan. I also used ketchup instead of tomato sauce. It tasted pretty good, would make again.

Jenny's Black Forest Cake

This cake was a delicious addition to a dinner I had with friends. I used soymilk to make it vegan. I also used splenda and no sugar added cherries to make it healthier. It was amazing and delicious! Def recommend.

Rugelach

Could not stop eating these! I used vegan versions of butter, cream cheese, and sour cream and they were wonderful! The dough was a bit sticky when rolling out, so I sprinkled the counter with cinnamon sugar and flour and it was much easier to work with and tasted yummier! I made some with raisins and some with chocolate chips. The kids loved the chocolate chip ones, but I thought they were all delicious!

Chocolate Rum Balls I

Delicious! Instead of vanilla wafers (not vegan) I used chocolate graham crackers and still added the cocoa powder so they were super chocolatey, but super delicious! You can taste the rum, but I also used really cheap rum, better rum may be better. Definitely let them sit for a week or so and the flavor is much better!

Brazilian Whole Banana Pie

Made it twice already and it was gobbled down both times! It makes a lot and is very filling and healthy! I wouldn't change a thing with this recipe, it really comes out perfectly!

Cherry Snowballs

Taste great and look adorable. Despite what the recipe said, I used fake, vegan (Smart Balance light) butter and they still turned out great! I also used soymilk instead of regular milk. These are a little more work then some cookies, but well worth it!

Maple Muffins

These were wonderful. I took them in to work and they went fast! I changed them a bit. I used egg substitute and vanilla soymilk to make them vegan. I also used sugar free syrup instead of real maple syrup and they were still delicious, but healthier! Highly recommend.

Asparagus Cashew Rice Pilaf

This turned out pretty well, but could have used a bit more seasoning. I used my vegan butter and only 2 tbsp. I also added 1/4 cup of extra cashews (I love cashews!). It was pretty good, but I might add different spices next time I make it.

Lentil Loaf

Ok, I changed a bunch of stuff in this recipe and it turned out wonderfully. As other reviewers noted, I cooked the lentils in veggie broth. Instead of tomato paste, I used ketchup. I was also out of bread, so had to be creative. I used what I had left of stuffing mix, about 3/4 cup after soaked in water. I also tore up an "everything" bagel and put that in. I baked it an extra 15 minutes as well. It was fantastic. Not as solid, but still tasted great!! I plan to make this again.

Sweet and Sour Seitan

Very delicious. Our store didn't have Seitan, so I used frozen Veggie Chicken Strips and it was delicious. I made it for dinner with my parents (not vegan) and the loved it. Even my super meat eater father went for seconds! Wouldn't change a thing with this recipe!

Vegetarian Gravy

Tastes AMAZING!! Took it into my office with biscuits and it was gone! So good. I made it without only about a tablespoon of olive oil instead of the veggie oil and it was still delicious! Highly recommend!

Baked Doughnuts

These turned out very well for me. I used vanilla soymilk instead of buttermilk, vegan butter (actually Smart Balance Light), and egg substitute. I also used a muffin tin because I don't have a donut pan. I halved the recipes and filled all 12 tins to make small muffin like donuts. The spices were great in the donuts. I also added a glaze made of vanilla, powdered sugar, and soymilk, which made them even more donut like. I brought them into work today and they were all gone within a couple of hours. Thanks for the recipe.

Apple and Spice Cookies

Super yummy, I can't stop eating them! I changed a few things to make this a softer cookie: instead of apple juice I used apple cider and I added 1/3 cup of unsweetened applesauce, I also used only 1/2 cup brown sugar and 3/4 cup of splenda. I also omitted the raisins and used 3/4 cup pecans instead of walnuts. This recipe turned out delicious and is perfect for a vegan like me!!

Pineapple Cookies III

So yummy! I agree that they needed more pineapple flavor, so I added an extra 1/2 cup and 1/2 cup of flour to make up for the extra moister. I also added an extra 1/4 cup brown sugar. Instead of icing on top I put a marachino cherry in the middle before baking. They look and taste supper yummy! Thanks for the great recipe! Ok, new addition! Instead of the extra flour I added oats to make up for the extra moisture! It was delicious! So add an extra 1/2 cup pineapple and 1/2 cup oats and believe me you'll love them!!

Pumpkin Pancakes

So delicious! The syrup really added great flavor. It didn't get as thick as I wanted so I added a can of apple pie filling and some dried cranberries while cooking and served it warm. It was absolutely delicous! The pancakes were super yummy too, moist and fluffy at the same time!

Homesteader Cornbread

Amazing! Tastes so moist and sweet, it was absolutely perfect! I am vegan, so I used egg substitute and vanilla soymilk and it turned out perfectly! I made a double batch and served it with some vegan chili for a Halloween party, it was all gone before any of the other food! Will definitely make again, thanks for the recipe!

The Best Vegetarian Chili in the World

Sooo delicious. I fed it to a group of my college students friends with some vegan cornbread and they had no idea it didn't have meat! Till they saw me eating it anyway! It was delicious, thanks for the recipe!
