Soft Oatmeal Cookies

This recipe, slightly modified, is excellent. My new go-to oatmeal raisin cookie. Modifications: I weighed the flour (not really a mod, but more accurate) 2 cups all purpose = 8.5 ounces. I also increased the cinnamon a little, to 2 tsp. I only had old fashioned oats so that is what I used, as is. I completely skipped the "chill" and "flatten with a fork" steps. In my oven, 8 minutes was perfect. Chewy oatmeal raisin goodness.

Vegan Chocolate Cake

Butterscotch Pudding I

Slow-Cooked Corn Chowder

Even my son loved this chowder! It was delicious. We had it with biscuits. What a great meal on a chilly night. The only substitution I made was I used cream of onion because my son doesn't like mushrooms.

Grandma Johnson's Scones

I use half whole wheat flour and half unbleached all purpose flour. As others have said, I also use a little more cream of tartar (usually a slightly rounded 1/4 tsp). This is excellent. I get requests for these from my husband's co-workers. I can either make cinnamon (add 1 tbsp cinnamon and 1 tsp vanilla) or cranberry-orange (soak dried cranberries in 1 tsp orange extract plus enough hot water to cover; use zest of 1 orange. Once cranberries are plump, drain well.)

The Best Corn Bread You'll Ever Eat

This is my favorite cornbread recipe, and I never used to eat cornbread! My husband and I are the only ones that eat it, so I freeze the leftovers. When ever I make chili or pinto beans, I just heat a piece of frozen cornbread in the microwave and put the chili/beans over it. Delicious!

Chocolate Chip Meringue

Delicious! I wanted to find a lower calorie cookie and this worked. I only used half the chocolate chips it called for and they were soooo chocolaty.

Basic Flaky Pie Crust

This was the easiest and best pie dough I've made. I used non-hydrogenated shortening (from Spectrum). It worked just as good as regular shortening and is better for you.
