Best Big, Fat, Chewy Chocolate Chip Cookie

An excellent choice for days when you want cookies quickly and don't feel like hauling out the stand mixer to cream the sugar and solid butter. This is the first time I've ever made cookies using melted butter, and while I was skeptical at first, the family and I really liked them. I thought they had a very nice flavor, and especially loved how totally easy they were to make!

Creamy Mushroom Soup

Meatball Nirvana

This was a nice change from my usual meatball recipe. I just ate one right out of the oven, with no sauce, and they have a great flavor. I used half pork, half beef, and reduced the crushed red pepper to just 1/4 teaspoon, however they are still quite spicy...delicious to me, but might be too much for my kids. Next time I'll have to use even less of the red pepper. Still, these are very tasty!

Delicious Peanut Butter Cookies

If you like thick, soft and cakey cookies, this is the peanut butter cookie recipe for you. I prefer mine a bit thinner, crispier and chewier, so will keep looking. I thought the cookies had a nice flavor, however. I used butter instead of shortening, and reduced the salt to 1/2 tsp because my butter was salted. Also, as another reviewer noted, a tablespoon of vanilla seemed like an awful lot for this size batch of cookies, so I assumed it was a typo and just used 1 teaspoon, which was the perfect amount.

Pesto Polenta Lasagna

Excellent base recipe for a very unique and delicious lasagna! I added sauteed spinach, fresh basil and parmesan cheese to mine, and it was great. Maybe we are just big eaters, but this made just enough for our family of 4...if you are trying to serve 8, I would double this recipe and make it in a 9 x 13 baking dish.

Mom's Brown Gravy

Super-easy and very good. I didn't have the yeast spread, so subbed 2 bouillion cubes and a spoonful of Tony Chachere's gravy mix. Delicious!

Easy Sugar Cookies

All I can say is "Yum"! And these were so much easier to make than roll-out cookies. While I will still make the roll-out kind for Christmas-giving, these are definitely my new "go-to" cookie for when the kids and I get a craving!

Sugar Cookie Frosting

I made this with butter instead of shortening, knowing that because of this, it wouldn't harden up enough to stack the cookies, but it didn't matter because it tasted SO good! I added a little lemon extract and yellow food coloring to the recipe, and used it to frost the Easy Sugar Cookies recipe from this site, to which I also added some lemon extract, and while not super-lemony tasting, it gave it a little "something" special....this is one of the best frosted cookies I've ever made!

Waffles I

Almost as easy as opening up a box of waffle mix, and much better tasting! I didn't bother to separate the eggs, and still found these to be very light. I used half whole wheat flour and doubled the vanilla and sugar...the kids and I really enjoyed these.

Quick Cake

This was definitely the easiest cake ever, (though like another reviewer, I found it much easier to mix up in a bowl than in the pan). It tastes good served warm with a scoop of vanilla ice cream, and is great for a last-minute weeknight dessert for my family. I was thrilled to find a cake recipe that doesn't use butter or eggs!

My Best Clam Chowder

This was my first time making clam chowder, and as many have before, I loved this recipe! Although I personally wanted to try the bacon version that was recommended by others, I was making this for someone who doesn't eat pork and is trying to lose weight, therefore I altered the recipe slightly, following the advice of another reviewer: sweated off the onion in a little olive oil before adding the other veggies, used all clam juice instead of water, reduced butter and flour to 1/2 cup each, and used fat-free half and half. It was delicious and just the right thickness for our taste. Great recipe!

Hot Milk Sponge Cake I

I didn't use the topping recipe, but instead turned this into the BEST strawberry shortcake recipe ever! Baked it in a 9-inch round pan, sliced it horizontally, filled with sugared strawberries and freshly whipped cream, and topped with the same, and it was gone within minutes! Thanks so very much, as I'm not so much of a baker, but this was incredibly easy and delicious.

Best Cream Of Broccoli Soup

Very good recipe. This was my first attempt at making cream of broccoli soup, and so I made it exactly as written to start with, but found it to be not substantial enough. So I added about 2 cups additional broccoli florets at the very end and let them simmer in the soup until cooked but still somewhat firm to the bite, and then it was perfect for my taste and for my fiancee (we are both broccoli lovers). Thanks for this recipe!

Chocolate Cookie Buttercream Frosting

I followed the recipe exactly, and thought this had a nice mellow flavor and good consistency. As far as chocolatety-ness, for me, this fit the bill perfectly for what I needed, which was something my kids could spread on their own homemade cookies for a fun Friday night activity. And honestly, if you dice the butter into small cubes and whip this up in a stand mixer, it is almost as quick and easy as opening up a can of frosting...good recipe!

Brownie Frosting

I discovered this wonderful recipe a while ago, and have made it for myself and my children many times as a delicious topping for plain old boxed-mix brownies. The other day my daughter asked me to make a pan of "just the frosting"! Well, why not, as it thickens to almost that consistency anyway! It's a frosting and a candy...:)

French Spring Soup

After reading some of the other reviews, I subbed chicken broth for the water, to reduce the fat, I subbed half and half for the cream. Otherwise I followed the recipe exactly as written, and it was a winner...really very delicious. I tasted like a restaurant-quality dish and looked with it as well when garnished with grated cheese and a sprinkle of fresh herbs. My fiancee and children loved it too. Definitely a keeper!

Chocolate Frosting II

This is perfect frosting for cupcakes. It is fluffy, rich and thick, however, the recipe did not make enough to frost a 2-layer cake. I used just 3 cups of the sugar as recommended by other reviewers. My kids loved this, and the best part for me was that it was so quick and easy to put together!
