Vegetarian Split Pea Soup

This was a great split pea soup. Like a few other reviewers, I left out the orzo, and added a couple of diced potatoes, because we are big potato fans at our house. Otherwise, I made the recipe almost exactly as written (on the stovetop, though). I didn't have the chipotle chili powder on hand, so I subbed 1 teaspoon of smoked paprika for the smokiness, and 1 teaspoon of sriracha hot sauce for the heat (any hot sauce would have worked, I think). I think this gave a pretty good approximation of the chipotle chili peppers, which only added to what I thought was a perfect balance of peas, liquid, and vegetables that was indicated by the recipe writer. Delicious!

Fondant Potatoes

I love all of Chef John's recipes, and fondant potatoes is no exception! While a bit decadent in terms of fat content, these potatoes make a unique and luxurious side dish for a special meal. I served them alongside grilled king salmon for Christmas dinner, and it was a surprisingly great combination. I followed the recipe to the letter, and the one thing I will say is that mine needed closer to an hour in the oven (and I used about a cup of chicken stock total) for the insides to be cooked through and nice and creamy. I ended up having to stick them back in after removing them at 40 minutes, when my daughter tasted one and commented that it wasn't done yet. So be careful to make sure they are cooked through before serving them. I will say that the presentation on the platter with the flourish of thyme sprigs was quite striking! Great recipe, and fun to try to something new.

Sugar Cookie Cutouts

This cookie is not as sweet as many other sugar cookie recipes...which made the cookie popular with some folks, but not so much those with a real sweet tooth. I liked them, though. The dough definitely needed to chill for at least 2 hours to be able to roll it out without sticking. I also followed the hint from another reviewer about rolling out on parchment paper, removing the excess, and then putting the whole sheet of parchment with cookies on the pan to bake...this was a GREAT tip for keeping the cookies' shape.

Quinoa and Vegetable Soup

Very good soup. The family was doubtful when I said I was making "quinoa and cabbage soup" but it turned out very well. I didn't have the Italian seasonings on hand, so I tried different spices that I did have - smoked paprika, cayenne, a little creole seasoning, & black pepper, and I also bumped up the amount of garlic by about 3 times the amount. I used the full amount of low-sodium chicken broth indicated, and didn't feel that it was too soupy at all. I used manchego cheese instead of the parm, only because that was what I had. I thought that the smoked paprika and manchego complimented the cabbage & beans very well. I served it with quick homemade biscuits, and it was a warm comforting meal on a cold night.

Old-Fashioned Potato Soup

Great recipe. Like several others, I didn't feel like getting two pots dirty to make one soup, so I simply sauteed the onion, carrots, (and I added some diced celery) in the butter first, then added the flour to make the roux, then added the potatoes and broth, and just cooked the potatoes in the base. It came out great! I used 1% milk to try to cut the calories a little bit...still came out nice and creamy. Everyone loved it.

Oven Fried Chicken III

I don't eat chicken but still cook it for my kids...and they liked this! I am always skeptical of any recipe that contains cooked mayo, but I took the advice of some other reviewers and thinned it out first with a little milk, and it really helped the crumb topping to adhere. The drippings made a tasty chicken gravy, also.

Spaghetti Aglio e Olio

Fantastic! Better than my grandmother used to make (sorry, Nana, may you RIP). I used the proportions of the sauce/toppings, including the butter, on 1 and 1/2 lbs of pasta, so that there would be leftovers for the kids' lunches, and it was perfection. I think we used more than 1 cup of cheese, though. I also used the pasta water that someone said Chef John recommended in the video version of the recipe. Truly delicious, simple, inexpensive, and pleased the whole family. Thanks, Chef John!

Broiled Tilapia Parmesan

Excellent! I threw this together for my son with some tilapia I had n the freezer, when the rest of us were having homemade pizza (he is the only person in the world that I know who doesn't like pizza). It was really good! He ate the entire pan (and he's 8 years old)!

Snickerdoodles II

Perfect and foolproof recipe, even for the somewhat baking-challenged like myself. I followed the recipe exactly, with the exception of one thing...I used half butter and half shortening, only because that was what I had on hand. These are the best snickerdoodles I have ever made, and my daughter, a snickerdoodle afficionado, totally agreed!

Gelato

I was really looking forward to this, based upon all the other reviews, but it just didn't turn out that well for me. I followed the instructions exactly, but it was slightly grainy and didn't harden up very well, despite 45 minutes in my ice cream maker. I have it in my freezer now, hopeful that it will harden up enough to eat. Since I am a novice ice cream maker, and this is only the 3rd time I've used my machine, I might have to chalk it up to my inexperience and try the recipe again another time, because I love gelato!

Very Chocolate Ice Cream

Fabulous! This was my first time making ice cream ever in my life, and it came out wonderful. After reading some of the reviews I added an additional ounce of dark chocolate, and poured the chocolate mixture through a strainer before chilling it...was glad that I did, because I could see where I strained out some little bits of egg that I had not properly tempered...other than that, followed the recipe exactly and it was SO good. A keeper!

Melinda's Porcupine Meatballs

very very good. I had never had porcupine meatballs before. I left out the tomato sauce and made a brown-gravy version only because my son refuses to eat anything with tomato sauce. The whole pan was gone in a matter of minutes. I only had medium grain rice, and was concerned that it might not cook all the way through, so I parcooked it in boiling water for about 4 minutes before adding it to the meat mixture (cooled)...it came out perfect! Thanks for a keeper!

My Country Style Steak

This was my first time making cube steaks in my life. I followed the recipe almost exactly, except for subbing garlic powder for garlic salt, and it was perfect. Everyone just loved them! We have had these at least 3 times since that first time. Today is a busy day and I'm making a crockpot variation of this recipe; we'll see how it turns out!

Snickerdoodles III

I picked this recipe out of the multiple snickerdoodle recipes on this site, because it contains all butter, and I can't stand vegetable shortening in cookies (even though I know it provides textural benefits and so forth, it's the principal of not using trans fats). Anyway, I made this recipe exactly as written, except followed one reviewer's suggestion of flattening the balls slightly before baking, and they came out perfectly. Just as good or better than any I've had from a bakery! In fact, the kids and I just polished off the rest of them for breakfast...(ooh, bad mom!) But they are so good, and not overly sweet. Great recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

An excellent choice for days when you want cookies quickly and don't feel like hauling out the stand mixer to cream the sugar and solid butter. This is the first time I've ever made cookies using melted butter, and while I was skeptical at first, the family and I really liked them. I thought they had a very nice flavor, and especially loved how totally easy they were to make!
