Banana Cream Pie I

I almost didn't make this recipe because there are so many conflicting comments on how it should be made. So, I just went ahead with the recipe as is, although I did substitute flour for cornstarch. I think that the baking helps the bananas break down. We LOVED it, and I will be making it again this week for thanksgiving!

Buffalo Chicken Chili

My husband and I love this, but with some tweaks. I only use half the chili powder, otherwise it overpowers the buffalo flavor, and I use between a third and half of cumin, because cumin is strong. I usually use more carrots and celery (nothing wrong with making something more healthy!) and I double the crushed tomatoes and add no tomato sauce. This is a great recipe to play around with, and like I said, we love it. Rated it 3 stars due to my changes

Chicken Encilantrada

I really wasn't sure about this, my husband found the recipe, and I usually don't like cilantro. Not sure if I added a cup, but it mixed so well with the onion and the salsa. I added a pinch of cumin, maybe a half a tsp of garlic powder, and red pepper instead of black pepper. really good on chips!

Chicken Breasts with Lime Sauce

I would give this 5 stars the way I made it. After reading all the reviews, I changed things up a bit. I cooked the chicken as according to the recipe, although I seasoned with pepper before breading. For the sauce: first, I deglazed the pan (there were burnt parts of the breading, and NOTHING to drain), and got that clean. Then, I added about 1/3 cup chicken broth and 3 tablespoons of butter, got that boiling and reduced it a bit. Then added 2 tablespoons of lime juice (not from a lime), then chives, and the dill. Prior to making the sauce, I mixed some flour with some water, made about a tablespoon's worth of the flour paste to thicken the sauce. I added that last, and let it all boil for like a minute. Then, I put the chicken back in and served. Nice thick TASTY sauce. Not too limey. The dill flavor came out nicely. It all blended SO well. YUM! Will definitely make again.

Red Beans and Rice

this was sooooo good. wow. thanks so much for the recipe. I only changed it up a bit, but only because of necessity (this was all I had): i used half ground beef and half kielbasa, and I used half red kidney beans and half white kidney beans. Oh, and I omitted the cheese, because I don't have any. I don't think it would need cheese. absolutely delicious!!

Mama's Asian Chicken and Rice

I'm giving it 3 stars bc I changed it. I would give a 5 to my changes! I doubled the brown sugar, and added generous squeeze of honey. I halved the garlic (I used the kind that is in a jar, and a teaspoon is one clove. 2 tsps seemed like more than enough.) I added a few shakes of "hot shot", which is a black pepper and red pepper mix.

Liked it, but felt like it was missing something. Tomatoes? I added an extra 1/3 cup of broth because it seemed like it was dry. There were no real juices to this, but it was still pretty good!

Chicken Scarpariello

This was tasty, but not robust. I needed to add more butter and garlic than the recipe called for, and I did put garlic pepper on the chicken before I coated it with flour. I beat the chicken with my meat tenderizer to make it fairly flat, which helped it cook quickly. With the leftovers, I added a laughing cow wedge of cheese before reheating, and then stirred it all around. Yum!!

Pineapple Drop Cookies II

These were ok, kind of bland. I omitted the raisons bc I didn't have any. I dripped some of the juice into the dough to help it with flavor, and that didn't really. I made two batches, the second I rolled the dough balls in some cinnamon-vanilla-sugar (that I use in all desserts, yum!) and they came out better. I am new to baking and wonder how people make cookies taste sweet? Don't get me wrong, though, these were good! Just not, "omg I must eat all of these right now", which is what I was hoping for.

Raspberry and Almond Shortbread Thumbprints

Really good and hubby loved them too! Had the issue where they got really flat, but it didn't hurt anything. I also made a batch without jelly, and put chocolate frosting on them after baking, and the cookie wasn't as good. I think the glaze helps a lot!

This was really good! The only thing I changed was adding a small can of tomato sauce to the broth, because I knew my husband wouldn't like the tomato chunks, and then a little bit of pepper.

Kris' Lentil Sausage Soup

My husband and I both enjoyed this. The only things I did differently was I used 1/2 lb of sausage and 1/2 lb of bacon, because that was what I had, and then I shook a bit of smokey sweet pepper into the soup and a dash of red pepper vinegar. YUMMMMMM and so filling

Banana Crumb Muffins

wow, I've never made anything from scratch and been this happy with the results. DELICIOUS! Definitely make the crumb topping. I have a "sweet mix" that I used instead of cinnamon--it's cinnamon and sugar and vanilla. Other than, followed to a t. So good!
