I am a working mom that loves to cook, but has been confined to an apartment without an oven. This has hampered my cooking inspiration... but I always find a way to try simple recipes.

Meat - steaks, soups, no bake desserts, salads, Mexican, Italian, etc. Anything simple!

Cooking with my daughter while pretending being the stars of our own cooking show. Good times...

Gorgonzola Sauce
This sauce goes great with wings (with or w/o hot sauce). A thicker sauce is recommended if you are going to serve it with wings.

Easy Arroz con Gandules
Loved it. I added some smoked cooking ham to the seasoning mix while cooking the sofrito. I also used Goya's Green Pigeon Peas with Coconut Milk (don't worry, it only changes the consistency of the dish).

Slow Cooker Ham
Great results. I used a 7 lbs. pre-cooked spiral ham. Mixed the powdered glaze (the one that comes with the ham) with some brown sugar and used the powder mix as a rub. Applied the rub to the ham the night before. Cooked it for 2 hrs in high, always kept an eye on it since I didn't want to burn it.
