Slow Cooker Roast Beef

This was awesome! I changed it, JUST slightly: Still added in the onion soup mix, soy sauce and pepper. Also added a can of Campbell's Cream of Mushroom w/Roasted Garlic soup as well as some slices of dried garlic. Instead of water, I used beef broth - this was done easily in 11 hours, probably before then but I wasn't home to check! Will make this again and again - juice is perfect for making gravy with. I make gravy by taking the juice and adding it to a HOT saucepan, and bringing to a gentle boil. I then mix 3/4 warm water with 6 tablespoons of flour, and pour about 1/2 of that mix into the juice after it boils, mixing completely. I add more of the water/flour mix if it tastes like it needs it. Totally awesome!!

Raspberry Spinach Salad

I'm not a big fan of people that change up a recipe, and then give it a low review because it didn't meet their expectations. That being said, the ONLY change I made in this was to use spring greens rather than spinach, because it's what I had on hand. FANTASTIC! Yes, the dressing is sweet but I didn't feel it was too sweet by any means - I did use sugar free jam, so I'm not sure if that made a difference at all. I don't feel that the kiwi is a necessity, I didn't notice it much in this. I saw someone else said the onion was not needed - I would beg to differ, it added a lot. This is a keeper!

Baked Chicken Nuggets

These were good - I used panko bread crumbs instead of Italian seasoned ones, and put a wire rack over a foil covered cookie sheet to bake them. I accidentally forgot the parm, but even without it they were good. I'm not a huge thyme lover, so I will probably cut back to a 1/2 teas (if any at all) next time. Also, I reduced the salt to 1/2 teas.

Fresh Asparagus and Chicken Casserole

Not sure if it's far of me to rate this recipe as I did things COMPLETELY different...but it was the basis of it, so I might as well. I cooked two boneless/skinless cubed chicken breast in my dutch oven first while I boiled the egg noodles. Once the chicken was no longer pink, I added a cut up green pepper, 1/2 a white onion, two celery stalks cut up, two minced garlic cloves and all the asparagus along with maybe a cup+ of chicken stock. I let that simmer for maybe 5 mins, then added the sour cream and oregano as well as some basil and a can of cream of mushroom. I let that cook for another 5 mins then I mixed the egg noodles in with the whole lot and put it into a 9x13 baking dish. I shredded fresh parm on top (no clue how much, I like cheese so probably a lot!) and baked for just under a half hour. It was pretty good - I think it does need another spice and maybe have parm mixed into the whole thing rather then just on top. I'll make it again and try other things.

Uglies

I was pretty impressed, being a non-BBQ sauce fan. I made the following changes: used minced onion instead of regular, used 93% lean regular ground beef and used only 1 cup of BBQ sauce which was plenty. Same time I added the BBQ sauce I added about a 1/3 cup of brown sugar as well. Instead of rolling out the biscuit dough, I just flatted it in the palm of my Pam-sprayed hand. My biscuits came as a tin of 10, and I had plenty of meat to fill them. I also used block sharp cheddar just cut into smaller chunks and put one chunk in each cup. This is a definite keeper - especially since it is the ONLY thing I've ever made with ground beef that my 22 month will eat!

Broccoli with Garlic Butter and Cashews

VERY good - I was tired of plain ole broccoli and found this and sure am glad I did! I made the recipe exactly as is, just decreased the serving size to suit my family. Even my 21 month son liked it and he's pretty darn picky. This is definitely a keeper and going into rotation at our house.

Cheddar Chicken Spaghetti

This was good - per other reviewers, I added 1 tea each of onion powder and garlic powder which definitely added some flavor. I used 3 cheddar mix (sharp, mild and white) for the cheese which was nice. Next time I'd like to add a little crunch to the top - crushed corn flakes or bread crumbs maybe. A keeper recipe that the hubby really liked.

The Best Veggie Sandwich

This was decent, but needs something more. I made it exactly as specified other then I used a blend of sharp, mild and white cheddar instead of smoked. I liked the flavor but I wanted more - I almost think it needs something spicy to kick it up a little bit, but then again I like very bold flavors. I'll make it again but play around with other ingredients.

Black Beans and Rice

This was so-so - I'm looking for more flavor in my beans and rice. I did add 1 lb cooked lean ground beef and used chicken broth instead of veg broth. Other then that, followed to a T. Wasn't bad, just wasn't great. Nice in a pinch, last min meal.

Super-Delicious Zuppa Toscana

This was pretty good - I followed the recipe to a T other then I only used 1 teaspoon of red pepper flakes and I used some minced onion as I did not have a regular onion hand. My husband thought this was GREAT - I would not add the red pepper flakes next time and I would take more of the leftover bacon grease out before adding the chicken broth. Really liked the spinach in it to give a mild crunch.

Strawberry Cobbler I

This was decent but didn't blow my socks off. I used the "most helpful" review that said to sub lemon juice for the water and add more cornstarch - I do agree with that. Perhaps my strawberries just needed to be sweeter - it's not peak season so maybe it would be better in the summer when they have more flavor. I was impressed with the cobbler portion itself - it was buttery and very yummy. I'll give this another shot this summer.

Buttery Cooked Carrots

Yummy! I didn't really use any specifics amounts, just added enough of the margarine and brown sugar to make it taste good. I also drained all the water from the carrots before adding the other ingredients. My 20 month old LOVED this!

Slow Cooker Buffalo Chicken Sandwiches

This was very good and easy. I used 3/4 of a bottle of Frank's Buffalo Wing Sauce and about 3/4 of a packet of ranch mix with three large chicken breasts. I left on high for about 4 hours, then shredded and added the rest of the wing sauce. It WAS spicy but in a good way. When I put the chicken on the hoagies, I added a bit of shredded monterey jack cheese and let it melt a little bit before serving. Only reason this isn't getting 5 stars is that while it was good, it wasn't anything super special. Definitely a keeper though!

Avocado Smoothie

Pretty good - I used greek yogurt and only 3/4 milk and added 1/2 a banana as well. I also used agave nectar instead of honey. Great healthy shake!

Awesome Slow Cooker Pot Roast

GREAT recipe! I cut the servings down to 6 since I was using a 3 lb roast for 2 people - I added a can of drained sliced mushrooms to the ingredient list and I browned my roast after rubbing it with garlic salt, pepper, and onion powder. VERY good - made great gravy that I thickened up a bit with flour. This is definitely a staple recipe for us now.

This was very good - I'm going to play with it a bit to see what we love. I added 3/4 cup water to 1 lb ground beef and this full amount - I had to let it simmer for a little longer then I was expecting but good flavor.

Sausage Balls

I was pretty impressed with these - so simple but yummy! Whomever suggested using the dough attachment on their KitchenAid was really onto something as well - I would strongly suggest letting your sausage sit out for 10-15 mins then use the KitchenAid to mix the sausage and biscuit mix together before throwing in the cheese. I also used a wire rack over a cookie sheet so the grease could drip down - only thing I will do different next time is spray the rack with a little non-stick spray.

Juiciest Hamburgers Ever

These were really good - I cut the recipe down to 4 burgers but still used the full egg. Very juicy and moist. Hubby liked them even after putting up a fuss about "changing regular burgers" :)
