Yummy Bok Choy Salad

I make this regularly and always get requests for the recipe. I never bother with the chow mein noodles but use double the almonds. I usually just need 1/2 recipe for a meal at home (and still wind up with a little left over). I've used it with spinach and chard also, it's always yummy!

Pie Crust III

I needed an oil pastry recipe since I was out of shortening and this one was perfect. I live in a very dry climate and have a lot of difficulty with a traditional pie crust... even with a little extra water, they crumble and look horrible. This crust was so quick to make. Handling was somewhat challenging, I did use the plastic wrap and it rolled out fine but it was difficult for me to transfer it to the pie plate. Both crusts tore a little but compared to how my other crusts usually wind up, these were fine. I slid one off the plastic wrap and actually picked up the second one which tore less. The taste was excellent. I will be using this crust from now on.

Bok Choy Salad

Wow! I love this recipe. So easy, so yummy. My six year old even loves it! We omit the chow mein noodles and double the almonds. Dressing is great on spinach too.

Sophie's Zucchini Bread

My kids love this and so do I... I make it frequently. I don't change the recipe but I do have to grease and flour my pans. I live at high altitude (6000 ft) and have had no problems using the recipe as is. I have tried other zucchini breads, usually with lemon flavoring, and I much prefer this vanilla-based flavoring. Thanks!!

Roasted Asparagus and Mushrooms

I've made this numerous times since discovering it. Everyone in my family likes it, though one kid skips the mushrooms. Sometimes I saute the asparagus and mushrooms in the olive oil, since some of the meals I cook with this require the oven at a different temp. I've enjoyed it both baked & sauteed. I always use the fresh rosemary and think it adds to it. Yum!

Yummy! I did use vanilla instead of almond extract which was fine. Also I increased the 2nd baking time to 25 mins, however, I live at high altitude (5000') and always have to increase baking time for cookies & such. Also, I flipped them about halfway through baking time so both sides would look "toasted." Highly recommended!
