Baked Chicken Breasts Supreme

I cut the cooking time down from 45 to 30 minutes, and I'm glad that I did! I think that with more seasoning in the marinade, and some spices in the breadcrumbs too, this could be quite good. As it was, I thought it was just okay, but my husband liked it.

Mulligatawny Soup I

Really delicious! As is, a rich, decadent first course/appetizer. I admit, though, that I upped the curry to 2 tsp and added cayenne, as another reviewer suggested. I also added pre-cooked brown rice to the soup, rather than raw white rice, because I have a lot of extra in the fridge. I also minced the apple, so my cooked-fruit-shy husband wouldn't notice. He didn't have a clue! Updating my review here: I have since made this chunkier and another time pureed. We like it best either pureed or very finely chopped.

Banana Bread

Mmmmm...so good! As others suggested, I added an extra banana (mostly because I had four overripe bananas on hand), 1 tsp vanilla and 1/2 tsp cinnamon. Cooked 30 min at 350, then 25 min at 325. Made a gorgeous loaf, and it was so moist and banana-y. My husband loved it! Best banana bread I've ever had.

Denise's Peanut Chicken

The flavors in this are great, but it needed more of the seasonings. While I didn't double the broth, I did double the other sauce ingredients, resulting in a wonderfully spicy, vibrant dish. I also added broccoli. Next time, I'll exchange some of the chopped peanuts for peanut butter to make a creamier, more substantial sauce.

Steak Stir-Fry

Not my cup of tea. The soy sauce completely overpowered the garlic and ginger and made the dish so salty that I had difficulty eating it. True, my husband liked it, but I have no intention of making this one again.

Italian Sausage Soup

I used lean turkey sweet Italian sausage, which I drained and rinsed after browning. I've made this twice, the first time exactly as written. The second time, I added one extra clove of garlic, 1 tsp Italian seasoning, and just enough cayenne pepper to give it some warmth. Fabulous!! Once it's done, the broth is just out of this world delicious. And it definitely gets better the next day.

Good 100% Whole Wheat Bread

Holy cow! This is everything that whole wheat bread should be! My only change was to use butter instead of margarine, and I added 1/4 C vital wheat gluten, per other reviewers. It is SO light and fluffy. Delicious!

Hot and Tangy Broccoli Beef

As written, pretty bland. With some fixing-up, however, it was delicious! I tripled the garlic, added 2 tsp. minced fresh ginger, 1 tsp. beef bouillon (to the sauce), extra 1/4 tsp. red pepper, and another tablespoon or so of soy sauce. Also used round steak, which was much more tender and less fatty than sirloin.

Carrot Oatmeal Muffins

Truly delicious, even without the cream cheese filling (I ran out of time). I also made 1 change: I discovered half way through that I only had 1/2 C of oil, so I added a 1/2 C of melted butter. I made the muffins for a pajama party (the next morning), and they were a huge hit. Moist, flavorful, fabulous! I will make these again and again.

Lentil and Green Collard Soup

I made this soup exactly according to the directions. It was vibrant and flavorful and provided a healthy way to use up my collard greens. Although my husband and I both enjoyed it, I do think the recipe needs tweaking. The lemon juice really overpowered the other flavors in the soup (this could be because I used freshly-squeezed juice), so next time I will start with 2 tablespoons and increase to taste. I will also sautee the garlic with the onions, which I think will give it a rounder, more complex taste. Finally, the consistency was a little watery for me, so I'll cut down on the water by 25% or so next time. All in all, very good with a few adjustments.

Avocado Soup with Chicken and Lime

This was good but not great. I love all of the ingredients, so I thought this would be really delicious. It seemed like something was missing, though. Or maybe the proportions were off. I'm not sorry I made it, but I probably won't make it again.

Barbara's Hot Sauce

Without knowing the ingredients, my husband tasted this and said, "It tastes ketchup-y." He's right. It's much too sweet for us. The ketchup really ruined it, in our opinion. I added more cumin and some onion powder to cut the sweetness. It helped, so the salsa is now palatable. But I will never make this again!

Easy Spicy Roasted Potatoes

I made this twice this week (it's that good!). The first time, I followed the directions perfectly (with the cheese) except that I used regular baking potatoes. It was fabulous! The second time, I cut the oil to 2 tablespoons and increased the chili powder to 1 tablespoon. It was even better this way. I couldn't have asked for a better breakfast potatoes recipe! Thanks!

Nana's Mashed Turnip

Very good! I bought some turnips at my farmers' market and didn't feel like putting it in chicken veggie soup this time, so I tried this recipe. I sprinkled a little parmesan cheese on top before allowing it to brown. We enjoyed it greatly. Thanks!

My husband and I really enjoyed this. I used finely minced garlic and ginger in place of the pastes, but otherwise made the recipe exactly as written. We ended up needing to add extra salt. I served it over millet. It was a great way to eat frozen fish, as I find strong flavors are helpful when not using fresh fish.

Ginger Glazed Mahi Mahi

Excellent! Easy, healthy, and yummy. Like other reviewers suggested, I baked my fish. I also used about 1 T fresh ginger, only 2 T balsamic (the stuff I have on hand is really expensive), brown sugar instead of honey (I was out of honey), and no oil. After the fish was done, I emptied the sauce into a pan and reduced it. We served it over rice and a veggie medley. Next time, I'll *definitely* double the sauce. It was so, so good.

Chicken and Bacon Shish Kabobs

We thought this was tasty, but not great. We probably won't make it again. We made it exactly as written, and as other reviewers have noted, we had trouble getting the bacon crispy. We also didn't find the chicken all that flavorful, even though marinated for 7 hours. Also, 15-20 minutes is far too long to cook these. We cooked them for about 10, and that was plenty.
