Corn Chowder with Sausage

We loved this chowder. I did not have a problem with it being too thin, quite the opposite but that might be that I probably had 7 cups of potatoes and added 2 chopped carrots for color and added nutrition. I used turkey sausage instead of the pork sausage and left out the marjoram because I didn't have any. Once the potatoes were cooked, it was just a matter of throwing everything else in and dinner was finished.

Beef Barley Vegetable Soup

Loved this nice hearty soup for a cold VT evening. Made slight changes based on personal likes and dislikes. Threw it all in the crockpot and cooked the barley right before serving and added that to the finished soup. Didn't put in the frozen vegetables but did add a can of mushrooms at the end. Also added about 1T of minced garlic and probably about 1T of italian seasoning. Will make this again for sure.

Marshmallow Fondant

This was my first time using fondant. Like others, I used my Kitchen Aid mixer to mix everything. The next morning when I was ready to roll it out, I was about ready to throw it in the garbage and scream because it was sticking to everything..wax paper, countertop, rolling pin....once I started using more powdered sugar (and got rid of the waxed paper) everything worked out great. I was really happy with my overall experience, once I realized to keep using the powdered sugar and I got rave reviews from everybody.

Maple Apple Crisp

My family loves this. I use 8 apples and bake it in a 9x13 pan. I use 3/4 cup each of the brown sugar, oats and flour and only 1/4 cup of butter (to reduce fat). I cook it about 45 minutes to brown the top. Don't have any problem with it being soupy.

Banana Oat Muffins

My family loves these muffins. I usually add chocolate chips and use unsweetened applesauce instead of the oil. The last time I made these, I made a double batch and froze half of them. I take a few out of the freezer the night before and have a quick and easy breakfast the next morning for the kids and myself. My 5 year old loves them so much that he takes them for his school snack...of course, I'm sure the addition of the chocolate chips is a big reason for this...

Apple, Carrot, Or Zucchini Cake

We loved this cake. I used all zucchini, only 1.25 cups of white sugar, 1 full tablespoon of cinnamon and 1/2 cup of applesauce. I also threw in a handful of coconut...finished this today and making another one already. I liked this to eat for breakfast as it was more like a dense bread than a cake.

Fluffy Pudding Frosting

Loved this and got rave reviews, even from people who are not big "cake" eaters. Used vanilla pudding and frosted a layered "poke" cake with sliced strawberries between the layers. This was a perfect frosting for those times when you don't want an overly heavy and sweet frosting. My son dipped strawberries in the extra frosting, so this made a yummy fruit dip too...

Almond Maple Granola

My family loves this granola. When I make it, I make a double batch, doubling everything except the coconut. I also use whole almonds (chopped), walnuts, and sunflower seeds. For the dried fruit, we like dried cranberries and dried blueberries added to the raisins. I use unsweetened applesauce in exchange for the oil and have no problems at all with the substitution. I bake mine in batches in a thin layer on a cookie sheet for about 30 minutes at 350, keeping an eye on it during the last 10 minutes or so. Once you start eating this, it's hard to stop. Great!!

No Bake Cookies III

These were the best. I used butter and crunchy peanut butter because that is what I had. At first I thought they were going to be too runny, but they hardened up nicely and I was eating them before they had even cooled. Will make these often because they were so good and easy to make.

White Cake Frosting I

I'm not a huge frosting fan but I'll eat this frosting all day long. I couldn't believe how good this tasted...much better than the stuff that comes in the can. Everybody commented on how good this was. This was a good consistency for decorating too. I used this for my 3 year olds birthday cake and had no problems.

Avocado Feta Salsa

We love this. The last time I made this I only had dried oregano and didn't care for the dried pieces of spices..I like it much better with the cilantro. My 15 month old son could not stop eating this.

Rhubarb Sour Cream Pie

This is great. Different than your standard Rhubarb Pie. This will be the only way that I make Rhubarb Pie now. So easy to make this. Update: 7/8/09- Went to make this a few weeks ago and discovered that I didn't quite have 1 cup of sour cream so I used 1/2 cup vanilla flavored yogurt and came out great. For the topping, I only use 2T butter and use 1/2 flour + 1/2 oats. There is no tweaking necessary but I feel better about eating a huge piece knowing that I made it a little less fattening...And yes, this is still the only way that I make anything with rhubarb.

Golden Potato Soup

This was great. I doubled the recipe and it made about 4 big servings for hearty appetites. I used baby red potatoes and left the skins on, just cubed them up. I ended up having to use more water in order to cook the potatoes. Sauteed the onions up first, omitted the celery because I didn't have any and added 2 large, grated carrots. Used cheddar cheese and 1 ham steak that I cubed up. Little bit of pepper and garlic salt. I loved this. Thanks

Greek Chicken

This is great. I've made it a few times already and it is so simple to put together. I've also marinated some pork chops in this and those tasted great. A good way to use up my fresh rosemary and thyme.

Italian Roast Beef I

This was pretty good. I did not use all the oil called for, just "rubbed" the meat with some olive oil before rolling in the spices. I also cooked mine in the crock pot so the beef ended up being "shredded" when all was said and done. I will make this again.

Banana Crumb Muffins

These were great. I made mine into mini muffins and could not stop popping them into my mouth. I did use applesauce instead of the butter to cut down on fat. Also used 2 tablespoons of oats instead of the flour for the topping and added cinnamon and vanilla to the batter. For half of the mini muffins, I added a few fresh blueberries to the cups and these also tasted great. Can't wait to make these again. Thanks

Jet Swirl Pizza Appetizers

I made these for 3 different Christmas parties and everybody raved about them..and the best part is that they are so simple to whip up and easy to make more than 1 of them. I do de-grease the pepperoni in the microwave and I use the amount of cheese that the recipe calls for, maybe even a little more and I don't think there is too much cheese at all. Thanks for a great and simple recipe.
